I think you could, but you would need to change the amount, I think you'd need 1.5 cups of powdered sugar, and I am not sure how it would affect the texture of the cake. It would have to be an experiment.
4 layers make the cake almost 6 inches tall, almost the length of your cake leveller that you used to even out the sides, also why 4 different moulds, could be done in a single mould. All said and done the cake looks quite tempting. 😋😋
this cake was probably 8 inches tall, not 6 inches. And I prefer to use 4 pans, because I don't like slicing cakes in half. I don't even have a 6 inch pan that's tall enough to fit in all the batter, and putting too much batter in a cake pan will make the middle sink in.

1 tsp of instant will be great. I just brewed this coffee on my coffee maker, but if using instant coffee 1 tsp will do.
