Mumbai Style Pav Recipe | Eggless Pav/Dinner Rolls/Buns

  • Hi Guys,
    Today I'm sharing with you my favorite, ultimate Mumbai style Pav (Dinner Rolls/Buns) recipe. When I moved to Canada, I realized that I love Pav Bhaji (Famous street food from Mumbai) because of the those utterly buttery Pav and Pav bhaji is really incomplete without Pav (Pav really makes lot of difference in overall taste). The dinner rolls you get here from Grocery stores are usually very sweet and dense and doesn't go well with any of the famous street food from Mumbai like Vada Pav, Pav Bhaji, Misal Pav, Masala Pav etc. Am I too obsessed with Pav or Mumbai food? Well, I think I am.
    Do give this recipe a try and I'm sure you'll fall in love with these soft Pav.
    Ingredients:
    -3 cups All Purpose flour
    -3 tbsp Oil
    -1 1/2 tsp Salt
    -1 1/4 cup Warm Water
    -2 1/4 tsp Instant Yeast
    -2 tbsp Sugar
    Tips:
    -For this recipe it’s not necessary to make the dough in stand mixer, you can use hand mixer or also you can do it by hand. Just knead well.
    -For proofing the dough and pav (after rolling dough into small parts), I suggest keeping it in warm place. I usually keep them in the Oven with Oven lights on (though Oven is off) so that they proof and rise well. This is only if you are staying in cold climate area like me, where counter proofing is not sufficient.
    -While rolling the dough into small balls or parts, make sure to roll the top as smooth as possible in order to get even browning on the crust.
    -As we are baking them on high temperature (450F), make sure to keep an eye on them as they turn brown very quickly. Start checking on them after 6-7 minutes.
    -You can also apply some butter on top right after baking.

      @@bhadrik4 I used Fleischmann's yeast. Do proofing to check if the yeast is active. Otherwise the dough will not rise.

    Hi Harshita, I made these Bombay ladi pav, I must say this is the best recipe for it. Like any mumbaikar away from home , miss these the most and never like the bakery ones available locally. Have tried countless recipes for Bombay ladi pav but never found one, must say this is a keeper!! Thank u for sharing and for all ur efforts .

      But do add the actual kneading time, that would be helpful for beginners who don’t use a machine for kneading. I used a stand mixer for kneading! This definitely takes more time while kneading with hand.

    Some use milk instead of water for dough. What's the difference?

      Milk adds richness to the dough and water doesn't.

    Hi I tried this recipe and the Pavs turned out really soft and delicious 🤤 however, the tops of my Pavs did not turn brown. Do you have any tips for that? Also what brand of instant yeast did you use?

    Recipe is great except for the salt. If you aren't a fan of a salty after flavor, go with only one tsp of salt instead of 1.5.

      Hi Priti, You can use any, But if you’re looking for typical Mumbai Pav taste then go for water. You can even use half water half milk.

      Hi Priti, yes you can use Active Dry Yeast as well. Just increase proofing time a little. Baking in the convection microwave oven will be similar, preheat the oven at 230C and then bake them. Just keep an eye while baking as they bake quite fast because of the higher temperature. All the best👍🏻

    Few questions, why does my dough become sticky and and what to do to avoid it becoming too sticky where you cannot even knead it?

      You are putting too much water before kneading. You can always put more flour to adjust the dough. Just make sure the dough should be moist not sticky. You can also add lil oil on the countertop or lil flour while kneading!

      keep kneading it. Ladi pav dough is supposed to be sticky. You must knead it until it becomes non sticky. Then your pav will come out right.

    Some recipes have milk in them, is there a reason to skip milk in this recipe. I see that the North American burger bun recipes do have milk in them, not sure if that is what makes it sweet.

      Yes, You can replace water in this recipe with milk. Though Mumbai pav doesn’t have milk in it and it’s made out of basic ingredients hence I have not used milk here.

      If your oven’s highest temperature is 200C then bake at 200C or else 230C. If you bake at 200C it might require more time.

    My dough became too sticky and couldn’t really make balls out of it. I still baked them and it did turn out quite ok. I expected complete disaster. Also they were bit salty. For baking recipes please mention flour quantity in grams. I might have used less flour.

      The dough is supposed to be sticky for ladi pav. you have to knead it with hands until it becomes non sticky. Then your pav will come out correct.

    Mam , i brushed the top layer with milk or butter or evn egg wash and baked for more than 40 mins bt too the top layer of pav did not get dark .. can you pls help me in tat

      While rolling and dividing the dough, make sure the top of the dough ball is as smooth as possible, if it has any wrinkles or crinkled top, it doesn’t bring the color while baking.

      Hi there, There could be two reasons for that, either oven is not hot or the buns were not rolled out smooth. Make sure to preheat oven before baking. And if the buns are not smooth from top then they don’t get even color. Also, make sure the buns rise well during second proofing. Hope this helps.

    question: in northern part of India we don't get the true ladi pav, they are sweet, not as soft and the height is too much which makes eating vada pav or dabeli difficult. So my question is will the height remain the same as I've seen in your video using your recipe? thank you.

      Hi Prachi,
      I totally agree with you, here we get similar kinds and dabeli, vada pav feels like eating only pav.
      Height depends on how closely or far you keep the rolled dough balls, if you keep it very close in the pan then they won’t get much space sideways to rise and then the height will increase. I use 13x9 inch pan and keep 12 pav in it, gives perfect height just like Mumbai ones. Hope this helps!

      Hi Rashmi, I live in Canada and here we get Fleischmann’s Instant Yeast easily, so I use that. But you can use any brand you get in your area, just look for Instant yeast. Hope this helps. Thank you

      sabiha shaikh Hi Sabiha, As I have mentioned in the description box, you don’t need the machine. You can make dough by hand. I’ve done many times by hand when I didn’t have the machine. It comes out perfect.

      sabiha shaikh Oh That’s great! Looking forward for your feedback. When you knead the dough by hand, it will feel sticky and it’s okay to use more flour for dusting and kneading. Try to roll the top as smooth as possible.

      sabiha shaikh once they are out of the oven, the top crust is hard but when they cool down they become soft. How long ago did you take them out of the oven?

      Hi there, As we are baking at very high temperature 450F, 10 mins are more than enough, Mine are usually done in 8 mins, depends on the size.

      In bakeries, pav are made in very hot furnace (Bhatthi), and they usually take 4-6 minutes to cook. We are using quite similar concept here, baking them in very hot oven. They are perfectly cooked inside out. You can bake them at around 230C and once they get brown color take them out and allow them to cool down completely.
