Have been using this recipe with Atta (92 g) and vital gluten flour mixed (8g) for loaf bread, burger buns and ladi pav… it’s brilliant and my small family loves them!
Vital wheat gluten is the gluten that remains when u wash out all the starch from the flour. Its added to maida (aka weak flours that do not have a lot of protein content) to give the bread structure and spring. U can make pav without it too. And even sandwhich bread. But u will need to add gluten flour when making breads like sourdough, foccacia etc. Technically u can also add it when making pav but its not needed.
Vital wheat gluten is in fact typically added to whole wheat flours. That’s because , whole wheat has bran and that can cut through the gluten that forms in the bread. Gluten is responsible for the structure and rise of the bread. Which is why whole wheat flour , because of bran, does not rise as much as maida and is denser. Vital wheat gluten tends to reduce the impact of bran , allowing whole wheat flours to have a better rise.

I made this with all purpose flour and used the following tweaks. At 0:57 minutes, when she adds the 1/4 cup milk and kneads the sticky dough, I found that adding 2 to 3 tablespoons of all-purpose flour is key to getting the dough to get back to the non-sticky and malleable texture shown in the video. Also, I set the oven to 375 degrees F and after 20 min mark checked oven frequently to make sure the pav-bun tops are browned, but not burnt. I ended up leaving the pav-buns in the oven for 30-35 minutes.
You don’t need to add more flour, that would disrupt the hydration chosen in the recipe. Any bread recipe can be turned into a malleable dough even with a 100% hydration, the main key is to stay consistent and keep kneading until the dough is in the desired form. Don’t add more flour as your results won’t be exactly the same as the video. ( crumb size, etc). Pretty much just follow the recipe and don’t add flour, instead stay consistent and keep kneading! Hopefully this helps others have a great day! :)
I don't understand why anyone would dislike this video. A lot of preparation and work goes into making these videos and people just dislike like they can do better. These videos are really nice. Short and to the point. ❤️

This recipe turned out perfect to the T! It was so simplified and easy to make! My bread turned out extremely soft and fluffy.... Infact better than store bought! Absolutely recommend trying this! Also I'm new to baking and I had no issues at all. Quick suggestion. Knead the dough really well!

For all the people confused as to why the number of buns increased, it's normal to adjust the amount of dough in each ball to ensure they're all roughly the same size. I've made bread rolls many times and I too start with dividing the dough in equal parts, but I keep adjusting so it ends up with a different number entirely. Hope this helps you all!
@@fattypneumonia That's a good option. However, making buns is usually a chill process and it's annoying to break out the scale and measure each individual ball. I do it sometimes when I want absolute precision. But sometimes I just don't bother.

I tried it today and it turned out super soft. It was my first attempt and it was amazing. 250 ml milk, 500gms Maida, 7 gms pre activated yeast, 2 tbsp sugar, 1 tbsp salt and followed the steps shown in this video. 😊

@@Hope26059 Well i'm no expert, but this recipe turned out perfect with full All purpose flour(Maida). But when i used 1/2 wheat flour + 1/2 All purpose flour, i had to add more milk to have the perfect consistency of the dough while kneading.

It depends on the size of the container and the size of the dough balls that you create. My container size wasn't as big so I made 12 small dough balls.
I baked it first time: turn it out so good 😊 thank you ! only some of things I have to change since all the oven and climate is different around the world ( from Canada 🇨🇦) . > It took 2.5 hours to rise my flour ( because of now AC is ON during summer , winter May be less time as heater is ON > next time I am going to reduce the time to 15 mins instead of 20 mins , May be because of I have GE Cafe series gas oven and it is little dry then regular or counter oven > will add parchment paper on the bottom since I don’t have aluminum pan , I used non stick coated pan Hope this helps to some other home cook like me Keep sharing best and straight recipes

Everything was followed step by step 💯% incl measure, tempr n time. The pavs too came out great soft n fluffy but the only disappointment was the top surface didn't come out that reddish brown. Pl help , I want to try again Your recipes had never disappointed me. Thank you

The recipe came out really good. Only feedback I have is that in the video you cut the dough into 8 pieces and then you showed 12 pieces in the tray. I thought 8 were too big, so I made 9 to fit my tray; even then I felt the buns were too thick. May be this recipe can make 12 or 16 buns.

While cutting the dough u have made 8 parts and while placing in tin there are 12 parts.. how much does this proportion yield exactly..
