People often look for ways to be kind to themselves. A nutritious meal is absolutely an excellent way to be kind to yourself. Be careful about thinking of a meal as a gift to yourself. That can sometimes open the path to less nutritious treats replacing meals.
I swear this is the best cooking channel on youtube. I think it‘s almost the only channel that specialises on vegetarian/ vegan japanese dishes. I don‘t like meat or fish but i loooove japanese cuisine and I thought i won‘t be able to eat japanese anymore but Miwa proofed me wrong❤❤❤
What helps me to stay away from very processed "food", is partly to make sure that I learn and make healthy food *that is tasty* . There's this idea out there that healthy food has no flavour, I've even had people refuse to try kale chips I made (which were delicious) because they "looked too healthy". When healthy food is prepared properly, it can be VERY delicious. You don't need to boil a piece of chicken and some broccoli and eat it with no seasoning lol. I've found the key for this is to learn how to prepare vegetables specifically, or dishes which have a lot of vegetables, from different cultures. Which is basically how I found Miwa. :) Asian cultures, all through Asia (including places like India) really get creative and eat lots of vegetables. And the recipes aren't necessarily complicated either (in fact often aren't), often it was the regular people (aka not nobility) who ate vegetables the most throughout history, so the dishes we have now reflect that. Some of the recipes that may have been heavy in things like oil in the past, can be upgraded as well. For instance vegetable pancakes, which use a lot of vegetables, is normally basically shallow-fried for a couple of minutes on each side, and is a side-dish eaten with alcohol. But I altered it a bit to make it much less oily, and now I often have it for breakfast. :) I've been totally obsessed for the last 9 months or so, and have made it many many times. A friend even was convinced to try it, and she said she was shocked how delicious it was, since it was basically just a big pile of vegetables (a serving for me is about 2-3 cups raw veg).

I know the challange of sticking to eatinmg healty. I never was a big junkfood eater even as a child so that s not the problem but even eating can be a point for me. With 3 people with all diferent tastes I usually draw the short end and have something I can not really eat. I do meal prep ahead but still it can be a struggle. Meal prep not only usefull for good eatimg habits it also helps with your weekly budget. With grocery prices rising so much here that is something really important now for me. I think i'll make the rice for my daughter this winter season when I have salmon again for her. I usually have cabbage and chinese cabbage in my refrigerator. Tonight I'm planning to make suki shabu with it (I use pork but substitute with mushrooms for a meatless version, it uses shiro dashi though so I wouldn't call it vegetarian) and I add some shabu mochi for filling. And also making cream spring rolls. my daughter requested cream harumaki so I making it this evening. Tip: if you don;t have spring roll wraps but you have filo pastry that works great as well. And i usually put the springrolls in the oven. I never had springrolls with a vinegar, shoyu and mustard dip. i usually have sweet chili or Vietnamese chili sauce to go with harusame springrolls.

Love your videos! I believe one of the reasons that the Japanese are very healthy is because most of their meals are pretty low fat... Of course there are the other factors.... Thoughtful healthy cooking and refraining from binging. But I believe the low-fat is the main thing. Love the pickles!! 🙏🧡
Hi Miwa-san…..perfect video to help us eat more healthy and to give us more great ideas. I love Napa cabbage and always add it to stir fry and soups and salads. Last night I made a salad from Napa cabbage, romaine lettuce, red peppers and cucumbers. I added rice noodles on top and made a Thai type vinegar dressing. It’s very refreshing. So glad you made this video. I'm trying to meal prep to focus on "healthy" vs "convenient"... I'm middle eastern and we use so much flavor and spices and our cooking but we just eat too much 😉 It was easy to switch to Japanese meals, since there is a lot of fish, so Fish Friday is becoming more fun !! The salmon and carrot rice looks good, might give that a go at some point. I already like to make sweet corn rice in the rice cooker. I wish I liked more veg, I really hate cabbage (and most other greens lol, early childhood trauma..) so I never really know what else to use in it's place.
I think you don't have to push you to eat the ones you don't like. Just start with something similar to the things you already like. you like carrot and corn, so I'm guessing you like hearty root vegetables such as sweet potato. Dine with someone who likes vegetables is a great experience. I love veggies but kids don't much. I always show them how tasty egetables are. in a way, they are sometimes encouraged to try some^^

I think the word you were looking for instead of "jelly" is "paste." Fresh salmon is very expensive in my area. I might try this with tinned salmon and let you know if it works.

I love fermenting my own veggies. You pickled cabbage recipe looks very good. I can't get yuzu here though. Would the zest of a lemon work as a substitute?
It tends to be more affordable in Japan! Also, it's packed with umami flavor just like how dried shiitake mushrooms and fruits become dense when it's dried. it's more for adding flavor rather than actually eating. ^^
May I know if you know, Miwa, about the salmon that you eat in Japan? Are they locally farmed or imported? As I know 99% of the world's salmon sold are farmed and synthetic colourants have been fed to farmed salmon to give them this orange colour which you can see @2:22 . Only true wild salmon have orange flesh. Farmed ones are actually pale white greyish colour unless fed synthetic colourants. Would love to hear from you about this. Thank you.
Question as I am watching again…I’m on a no added oil vegan diet can the rice noodle recipe be made without the oil and the shrimp…maybe use seaweed instead?
I would use multiple kinds of mushrooms in replace of dried shrimps OR use drired shiitake mushrooms! ^^ For oil, toasted sesame oil will do the major roll to creat the bold tasse. so I don't know what you can replace it for this... sorry!

you can use tofu and soymeat! just remember to thicken the filling well especially if you are using tofu😍😋
