Coincidentally I made this Cake last week (and using KerryGold as well! ) and OMG So buttery, light and delicious - a bit salty at the bottom but in a pleasant way actually. I didn't use jam but fresh strawberries. Next time I'll try the jam again.

Tip: pipe a border of cream around the edge of the bottom layer before you put in the jam. You can add a little more and it won't seep out between the layers.
This brings back so many memories! I loved victoria sponges and also had a mild obsession with kerrygold where I wouldn't eat butter unless it was salted and kerrygold. Children are so strange.

I just tried this cake!! It turned out amazing!!! Only problem I had, whenever I cut the cake, all the filling just starts spilling out... I made sure that the whipping cream had stiff peaks n the jam was not watery.. But it still spills over.. Otherwise the cake was just delicious!!
