I have a suggestion on the food storage inventory. I don't have one like yours but if I did I would take my laptop down and make an inventory in excel. That way you can print it out and know exactly what you have and mark off what you use. Then every month you can update it with what was uws and if anything was added.
You have definitely inspired me to organize my pantry of which I have never done very well before. Once things are in the cabinets, past 6 inches, I never have remembered what was there. I took everything out, staked like items in shelves in rows and made a list on paper with amounts in pantry and taped them on the door of my pantry/ per shelf. I don't have an open pantry walk in like you do so things really have to be cataloged to even have any idea what it past the front 6-inches. When I remove something I now change the inventory number next to the product. I'm 72 and have never done this before and I have you to thank you for that. It wasn't easy, but I did it over weeks!! I retired in 2019 and moved away from my family. I still cook like I’m cooking for a family. Sunday afternoon I cook eight meals and freeze four. Then I prep two salads and two sides. I eat buffet style all week except Wednesday . I make fresh pasta and sauce and put leftover taco meal in the sauce . Saturday I eat all the leftovers and go do groceries I need for Sunday . I’m glad I caught this video. I like the idea of flattening the meals to take up less space and making smaller meat loaves . I usually make a huge one and freeze 1/2. Great video !!!

Chicken enchiladas: I cook my own chicken, I like the Hatch brand for enchilada sauce. I cook a little bit of diced onion, then warm up the sauce with the onion. I use corn tortillas, warm them on comal ( cast iron flat pan). Then dip tortilla in sauce, fill with chicken and jack cheese, and roll. Once my tray is full, I top the enchiladas with any left over sauce and a little cheese. That is it.
For your chicken bone broth/stock, don't you ever use the skin and fat? I use it along with the bones and it gives the broth incredible flavor. After straining, I just cool it overnight in fridge then scrape off the fat layer before using. You can use the fat layer for frying.
You can cook dry noodles in a fresh lasagne as well. Just use plenty of sauce. I add a little water around edges of casserole so noodles cook completely. A friend taught me this years ago. So much easier.

I have struggled with being a Mother to four boys and a husband over the years to cook them healthy consistent meals. We would be so busy, takeout was 2 or 3 times a week, Since stumbling across your channel I am on my way to being well organised. I would 100% prefer to spend a day cooking and prepping so that we're ready to go by dinner time. Sad confession to make but change is on the way. Thank you for your channel
It’s not “traditional” at all but I use cream of chicken soup and sour cream with green chiles or Rotel and Colby Jack for chicken enchiladas (grandmother’s recipe)
Absolutely love your videos, I’m from London, England your take on Shepherds pie is very different to our. Shepherds pie here is lamb mince and the only vegetables would be onions , cottage pie however has veg in, I use peas, carrots and onions. The history behind cottage pie is cool, the servants that would work for a Manor House would get the left overs vegetables wise and would mix in with beef mince, gravy and top with mash then oven cook until brown absolutely gorgeous when you swivel a fork on top of the mash to form peeks and then add fresh crushed black pepper. I MUST try your meat loaf sounds fantastic and not something people in England really have, keep the vids coming they are fantastic!! xx

My roommate and I make meat loaf ahead as well, but a bit differently, we make individual loaves about palm sized. We bake them off and then freeze them and put up in baggies and pull out 2 for a meal. It helps when we don't feel like cooking a full meal!

Try using your Instant Pot on the Soup setting for making stock! I do it for 90 minutes. Thanks for this video-I just added a few things to my grocery list in order to make a few freezer meals this week, and I’m excited for how easy they look!
👏🏻 awesome video. I love meal prepping. I cooked dry black beans yesterday in my crockpot all day and then packaged them in 2 cup containers for my freezer. I use them a lot in my black bean and turkey tacos. I have made your Uncle Rudy’s pizza sauce and it’s the best I’ve ever had. Think I may make some today for my freezer ❤️
I use the canned chicken from Sam's or Costco, it comes out creamy. I add cream of chicken soup and green chillies and a couple spoons of sour cream, green onions, cheddar or blend cheese. Scoop into the flour Tortillas and cover with green sauce and a bit more cheese on top, bake em up.
I don’t pre cook my lasagna noodles ever. If you are making it without freezing just prepare as you did but then add 1 cup of water around edge of pan before baking and they turn our perfect (also do not need to be oven ready).
Everybody in my family likes the 'end slices'. So I make mini loaves for each person or a little bigger for 2 people. It cooks faster than one big loaf.
I have always use corn tortillas. And I use the red sauce from las palmas. And I also add some onion to the chicken mixture. I layer it the same way as you do.
I throw my diced tomatoes in the blender before I put them in the pot. I've done the same thing, I've accidentally bought Diced, when I was trying to buy crushed 🤷♀️ Whatever works! Lol
I use the recipe on the back of the regular size can of "Hatch" green enchiladas sauce. It is so good and I always have everything I need in my pantry refrigerator. It's so easy to make.
Last week I made a couple of meals ahead for the first time and it was amazing. I didn't have to worry about making dinner because I already had meals made that I can choose from. Love your videos 🙂

Totally agree with you 100% I'll take 1 day and spend hours meal prepping, it's a lot of work to do in 1 day and it can be tiring but it is sooooo worth it in the long run!!!

Love making “make ahead meals”, never mind it’s just my husband and I now 😂 BUT... growing up in a family of ten and having to help with the work load, I STILL find it hard to cook for two. I have a pretty good food storage as well and have a master list of both freezer and shelves and rotate foods often. You are much more organized than I with your pre-printed labels but it is something I should do being as I give away so many meals. It would definitely be quicker than hand writing out the instructions every time. TFS and keep these kinds of videos coming. Stay well!
Thank you Kimmy..great recipes...Meat loaf is my favorite..I found a Sweet amd Sour recipe in the 50thAnn. Betty Crocker book in the back had recipes from the 50s. In the meat, egg, oatmeal, black pepper I added onion soup mix..can add BP. Sauce is the secret. One large.can tomato sauce, 1/2 cup apple cider Vinegar. A little brown sugar..about 3 tablespoons..warm to melt sugar..pour a little in the meat then cover the loaf. Bake.. my family's favorite..making it now for my sons 39 birthday dinner.
I haven't cried from onions in years! don't cut off the stem , cut thru stem in half, place face down and cut verical strips with stem in tact always, then chop away! it's not hard ,end result is chopped onions just like you have . I honestly couldn't take the misery anymore and came across this from a chef!

I'd freeze the browning juices from the beef (or pork) in ice cube trays & transfer them to a bag so when you need some extra flavor or liquid in a dish, it's all ready on hand. One or two cubes that contain a bit of grease adds taste and will not kill you :)
I’ve heard you can use regular lasagna noodles, but never wanted to risk wasting so much food because I’ve also heard you *have* to use the oven-ready ones, so I’m glad you mentioned that! My 3.5 year old wanted to watch with me and was trying to call your dogs through the computer 😂😍

For the onions- put a wet paper towel on the cutting board in the corner. Whatever is attracted to the moister in your eyes will go to the paper towel instead. Works like a charm. Also do you sell those stickers for your recipes or directions/ labels for the meals?
Oh a tip for onions if you want to try it. Put onions in the fridge a while before you want to use them, the chemicals halt making your eyes less irritating when cutting them
Your cooking videos are some of my fav! Ok, really I love them all...lol! Quick tip for onions - store them in the fridge for a number of hours before you use them...get them really cold and then when you go to slice them they won’t burn your eyes. 😊
Love your videos!!! I just found a hack for cutting onions. So to prevent the tears wet a paper towel and place it by cutting board (I placed mine in corner of board out of my way)... And I have to say it has worked for me lately!!! Hope this helps you too! ❤️❤️❤️

Keep onions in the fridge! Cutting them cold helps soooooooo much and 9/10 times doesn’t make me cry at all, and if it ever does bother me, it’s very minimally! Always do that now, and wish somebody would have told me sooner lol.
I use the website household notebook for my pantry sheets to print. You only have to write in the ingredient and one slant line for how many you have and slant the other way to mark off what was used. In other words, you are making a X. The site also has other printables available. Hope this helps.
I recently downloaded a food inventory app on my phone. I just scan the bar code and I add in expiration dates. It lets me know when I have things close to expiring besides how many I have.

I make taco meat in the oven in my turkey roaster. 10-20 lbs 93/7 ground beef, 3-4 lg chopped onions, 2-3 chopped bell peppers, chopped garlic, season salt, after cooked, add Tasso seasoning and water. Put 1 lb of mixture in small ziplock bags and put in freezer. We use at least one bag per week. If you don’t want all taco meat, bag some cooked meat up for spaghetti or other meals, and then add the taco seasoning. 🥰

Sounds weird and looks weirder but putting a stainless steel spoon in your mouth while you cut really works too!
I take the outa shell off and chop it in half then run it under water then cut and dice it doesn't make you cry 😊

I'd freeze the browning juices from the beef (or pork) in ice cube trays & transfer them to a bag so when you need some extra flavor or liquid in a dish, it's all ready on hand. One or two cubes that contain a bit of grease adds taste and will not kill you :)
I’ve heard you can use regular lasagna noodles, but never wanted to risk wasting so much food because I’ve also heard you *have* to use the oven-ready ones, so I’m glad you mentioned that!

For the onions- put a wet paper towel on the cutting board in the corner. Whatever is attracted to the moister in your eyes will go to the paper towel instead. Works like a charm. Also do you sell those stickers for your recipes or directions/ labels for the meals?
Oh a tip for onions if you want to try it. Put onions in the fridge a while before you want to use them, the chemicals halt making your eyes less irritating when cutting them

Your cooking videos are some of my fav! Ok, really I love them all...lol! Quick tip for onions - store them in the fridge for a number of hours before you use them...get them really cold and then when you go to slice them they won’t burn your eyes. 😊

Love your videos!!! I just found a hack for cutting onions. So to prevent the tears wet a paper towel and place it by cutting board (I placed mine in corner of board out of my way)... And I have to say it has worked for me lately!!! Hope this helps you too! ❤️❤️❤️

Keep onions in the fridge! Cutting them cold helps soooooooo much and 9/10 times doesn’t make me cry at all, and if it ever does bother me, it’s very minimally! Always do that now, and wish somebody would have told me sooner lol.

I use the website household notebook for my pantry sheets to print. You only have to write in the ingredient and one slant line for how many you have and slant the other way to mark off what was used. In other words, you are making a X. The site also has other printables available. Hope this helps.
I recently downloaded a food inventory app on my phone. I just scan the bar code and I add in expiration dates. It lets me know when I have things close to expiring besides how many I have.

We use peas in our shepherds pie but corn is a good idea too. I will have to try that.

I make taco meat in the oven in my turkey roaster. 10-20 lbs 93/7 ground beef, 3-4 lg chopped onions, 2-3 chopped bell peppers, chopped garlic, season salt, after cooked, add Tasso seasoning and water. Put 1 lb of mixture in small ziplock bags and put in freezer. We use at least one bag per week. If you don’t want all taco meat, bag some cooked meat up for spaghetti or other meals, and then add the taco seasoning. 🥰
