Many of them have some type of disability (physical, psychological and or both) and I explain to them that they should watch your lessons and actually I recommend they signup for your course.
I'm 65 years old and starting to play again and I find your lessons very good. I love your style of teaching and I noticed that when you arpeggiate you hold the pick in your thumb, index and middle fingers but strum with thumb and middle does it make it easier for you or just the way you learned?

an almost easier version, which I think is correct. After hitting G chord, slide the G shape up to 7th fret (B), then hit 1st finger on 5th fret of D string for the high G, then slide back to 3rd fret with G chord. You can strum the whole thing with a little muting.

Great observations. I think it might be a bad habit. I'm mainly self taught so I vary how I hold my pick depending on what I'm doing.

Depends on what you're doing honestly. Same strings has wrist motion. Between strings is more arm motion.
