    Just to point out for anyone copying the lentil recipe, green lentils would never get soft if they aren't precooked before going into a tomato sauce. The acid content is too high. Red lentils are fine, but green and brown definitely need precooked seperate as she said they were in the video.

    FYI if your lentils are sticking to the bottom of the pan, it means your pan is too hot... Great idea incorporating coconut milk into your lentins, that probably gives such a unique flavor!

    I love that you showed overfilling the pan-it DOES happen in the kitchen! It happened to me just yesterday when I totally overfilled my slow cooker when making a lasagna! And I was wondering, this CAN'T just happen to me! So this is very validating! In my case, I had to remove some of the stock from my pot, which I now have as a base for butternut squash soup in a couple days! :-)

    Ugh couldn't agree more about eating more vegetable. I tend to just go for rice, beans, and potatoes. ALOT lol

    Your curry will have more curry taste if you fried the curry and spices with your onion and garlic! 👍🏼

    Your bento boxes look so good!! I am retired, and usually cook rice and grains, in bulk...to freeze portions. I make lentil curry, or chickpea curry, often in the winter and keep a container in the fridge. Some evenings the last thing I want to do, is stand at the stove..so it's easy to throw together some curry & rice....I really loved this video!

    Have been inspired by you to batch cook evening meals for the freezer. Now have a good variety of meals on standby and has saved me loads of time on washing up. Much less of a faff using dried beans when batch cooking too, so had also been more economical than using canned.

    Re: whole versus ground flax, it is a little extra work to grind your own, but the whole seeds keep longer than pre-ground! I buy whole flax in bulk and keep that container in my cupboard, then grind small (about a week's worth) batches in my coffee grinder, and keep the ground meal in a tupperware in my fridge.

    I'm cooking the curry right now (simmering stage). I added some chickpeas, celery and broccoli to the mix. Also, mixed seeds instead of flax seeds.
    I'm going to let this settle and all the flavours blend together until Saturday. Can't wait to try it!

    Hey. I just wanted to let you know that too many flax seeds might be poisonous because they contain cyanid, so here in Sweden it's not recommended to have more than 1-2 tbl spoons a day, and they shouldn't be crushed. (if you eat crushed seeds you should not be consuming more than 1/4 of a table spoon if you weigh 60kg). I'm just not sure that everyone knows about this and just wanted to let you know.

      bookmouse770 Hi, yes a moderate amount is good. I'm a nurse, but not a nutritionist. The guidelines are from the Swedish national food agency. And I just wanted to mention it because this is what we learnt in school and I've talked to several doctors about it. They NFA recommend not consuming crushed flax seeds at all.

    The lentil curry looked amazing! A trick I was shown to sneak more veggies/nutrients into dishes like that is to grate carrot and cook it with the tomato sauce. It will soften and disappear!

    I always chop up the broccoli stems really small and cook them with rice and quinoa. Stretches the rice further and texture wise too can’t even tell it’s there

      They do add so much to anything you add them to. I sprinkle them on salads and cereal, mix them with granola or trail mix, even sprinkle a spoonful on my dog's food.

    I just made something similar to your tomato and lentil curry...just switch chili powder for the curry powder, and it's lentil chili. Oh and I added a red bell pepper.

    I find the easiest way for me to make beans is in a crock pot. Soak them over night, then just put clean water the next day and put it on high and after awhile I'll check on them, it will take longer, but its completely hands off

    Rose, you're so lovable.
    So I'm not alone using the smallest pan possible for dishes like stews and sauces... But instead of acting rationally and calmly I start to yell at the pan/dish/inanimate object (while praying nobody's listening...): "Fit in it, celery, god damn it, you too have to fit, spinach... Ah, well then. Eating from the pan it is..." :D
    I love your meal prep-videos so much, they gave me a ton of inspiration to food prep and meal plan during the week (as I work on weekends). The only thing I would change: I would sautée the onions and garlic with the spices and herbs for the dal/lentil-curry-dish (which reminded me of Chana Masala for some reason...) first before adding the lentils or the passata. It's a bit more flavorful in my opinion. :)
    By the way, if you find yourself not using up all your carrot and celery-sticks by the end of the week, throw them in the zip-bag in the freezer and use them to make your own vegetable stock with some onions and garlic!

    Do you defrost the smoothies bags before making your smoothie in the morning? Just because you said to freeze the bags but when you made the smoothie I noticed all the spinach and other ingredients weren't frozen.

      I don't freeze all of them because some of them I'm going to eat in the next 2/3 days so it'll last in the fridge ... but some of them, I don't eat until later which is why I freeze some and keep some in the fridge. so depends on how soon you plan on eating them!

      usually some other very heavy, filling fruit like a mango. i can't think of anything else off the top of my head but mangos also make a good smoothie base

    I have a big question. How do you peel the skins from your chickpeas/garbanzos???? I spend an hour cooking and peeling them and its the worst part of my meal prep. Do you have a lazy way to deal with those pesky garbanzo skins????

      But the skins are difficult for my stomach to digest. The skins are also one reason that beans give us vegans gas. I don't like being gassy

      For the chickpea one you could make it a soup instead and just add some Italian seasonings and veggies like green beans. Chickpeas and pasta is the basis for some good minestrone

    I'm new to Vegan. and I've been wondering what is the difference between regular tofu and silken tofu?

      Kristina Gutierrez regular is firm and has a different texture to silken, which is (you guessed it) silky textured. Silky is great for creamy desserts, regular for making nice crispy squares for stir fries.

      Christine Taverna I make cream sauces with cooked zucchini. I'm sure it would taste great in that recipe.

      or steamed cauliflower! that makes a strangely creamy sauce lol add a few spices and YUM

    When you blend your smoothie just whole flaxseed will grind up in your blender so there is no need to buy ground flax :-)

    Lentils with kale it's a bad mix. Explanation in Spanish because my English level isn't that good: el kale es una fuente de calcio y las lentejas una fuente de hierro, el calcio interfiere en la absorción del hierro negativamente, es decir, que no absorbes el hierro y no aprovechas los nutrientes de las lentejas por lo que es mejor cocinar las lentejas con otra verdura que no sea kale, ni tampoco tomar cualquier otra cosa que tenga calcio
