1 kg. Pork Belly
Oil, for sautéing
2 pcs. Onion, sliced
4 cloves Garlic, minced
1 cup Raw Bagoong
1/2 cup Vinegar
6 pcs. Tomatoes, sliced
1/4 cup Soy sauce
2 Tbsp. Oyster sauce
1 1/2 cup Coconut cream
8 pcs. Green Chili
Side of boiled Eggplant

Ano po pagkakaiba sa Bicol Express?
im newbie po sa pagluluto. may tanong po ako, tungkol sa paggisa ng baboy.
sabi nung iba kapag naggisa daw po ng baboy, hintayin daw po lumabas yung katas na liquid bago daw po isunod yung ibang ingredients.
pero sabi po ibang marunong din magluto, kapag lumabas na raw yung liquid sa baboy, wag daw agad ilagay yung mga ibang ingredients, hintayin daw po na mag evaporate ang liquid at lumabas na ang mantika sa baboy bago daw po isunod ang ibang ingredients.

Sa mga nagsasabi ng bicol express, walang tomatoes ang bicol.. Sinabi na ni chef na soy sauce for the color.. Also, nagluluto ako ng bicol, hindi ganyan karami ang bagoong sa bicol express.. Combination of bird's eye chilies and siling pansigang ang ginagamit sa bicol pero depende sa preference pero ang point here is malaki ang difference ng version ni chef sa bicol express.. Just because pork, gata, and bagoong eh bicol na kagad.. 🤦♀️

If there are no shrimp paste, maybe you can try to ferment shrimps yourself and use it in cooking. Or just to to use fresh shrimp and combine it with pork.

Nope, Bicol Express has a lot of green chilis. halos same na yung dami ng chili and pork. Plus, maliliit ang hiwa ng karne. wala ring toyo.
