Homefried Breakfast Potatoes
Recipe:
4 Idaho Potatoes
1 Medium Onion
1 tablespoon salt (start out with a teaspoon and add to your taste)
2 tablespoons paprika (add less if you like)
1 teaspoon black pepper
2 tablespoons onion powder

A young sista (maybe 18/19) was ATTEMPTING to describe to her Caucasian friends what these “things” are. The sista didn’t know the name (Salmon Croquettes) and I wanted to cry because… I should’ve told her the name and history of them INSTEAD of judging her for not knowing.

That was my favorite breakfast as a child was so special! Smothered potatoes, salmon, croquettes and eggs. Best breakfast memory 😋

This is how my mom used to fry potatoes. She liked using an electric skillet. They are good plain but I love ketchup on them. These along with cucumbers in vinegar...😋

Almost exactly like my Ma made hers except she used bacon grease, no paprika and garlic powder instead of onion. The potatoes were served with crisp bacon or sage sausage patties.

My mother used to make salmon croquettes, skillet potatoes and onions, and bake some biscuits. Have mercy that was too good!

My Grandma and Dad both made these. They didn't add the onion powder since the onion was already in it. Also no paprika, fried them in a large cast iron skillet so they didn't get mushy. They both saved bacon grease and used that to fry them in. Also used it to fry or scramble eggs. That was in the Northeast, so not Southern style. Although it sounds more Southern than yours.
So, in other words, they didn't make these...lol.

seasalt, black pepper, paprika, onion powder(start of using a little and increase seasoning to taste)

Simple, fool-proof...toss the veggies with seasonings before frying and it it won't break up the potatoes. You can include finely dice bell peppers and squash...at same ratio as the onion for even better flavor/nutrition.

I cut up andouille sausage fry them and add them to the potatoes
I was taught to use left over baked potatoes. Cut to desired size, season and sauté in butter to brown one side with chopped onions. After getting desired color, add chicken stock and let steam for a few minutes till tender off the heat (I use cast iron so the heat will carry over). Lot less fuss.
I have heard, but not tried, putting the potatoes in the microwave for a few minutes to get a head start on softening them up
Half the work is done because their cooked. You still need to add flavor, so it will take you less time. Do the onions 🧅 first, since they will take longer to cook .

I prefer my Home Fries with Avocado and Feta on top. The cheese melts and creates a delectable aroma as the Home Fries are mixed and then the richness of the Avocado adds an Umami to it.

Start with medium then reduce once covered....for crispy potatoes keep on medium heat but monitor so they won't burn...

My brother taught me how to make these. It's the only way I like them. I don't like the potatoes boiled like some people make them. I like mine almost potato chip crisp and brown.
i weirdly boil my potatoes (sliced them like into the chip form) for like 20 minutes (sometimes 30 if they are not tender enough) then i fry them up in the skillet with some oil, season with garlic and onion powder and put chopped bacon and mexican shredded cheese to enjoy, it's like a stovetop skillet version of a bacon cheese potato skin you get from restaurants (only cheaper)
My step did these back when we were kids but no paprika just lard with onions and salt sometime black pepper
We use a lot of bacon and I always have bacon on hand when I do my fried potatoes and onions it is in bacon grease did you know that Kroger selling canned bacon grease for $10 a can did you not know that check it out no way in hell would I ever pay for bacon grease when I get it from the bacon myself that's crazy and people will buy it as the old saying goes if you build it they will come if you make it they will buy it if you cook it they will eat it people are jacked up you do know that right I am 76 years old and thank god with age comes a little wisdom I'm still jacked up in some ways and probably always will because we all have baggage another different story but I'm just going to let you just hang with potatoes and onions but doing the bacon grease it's a world of difference in the taste now that's our deep deep southern fried potatoes and onions I mean like Georgia Rome Georgia Georgia potatoes and onions and black rod iron skillet

Hey David,
A little more than 1/4 cup...you may need more eye ball it...cook on med heat to start and turn down low once you add lid to steam cook.

Onions cook much faster than potatoes.
I always add at the same time...the texture is perfect for me. However if you prefer a little crunch you can add later

I see you barely put oil in the pan I did mine they came out Krispy and oily so how can I fix it

@@missiahthornton5170 yes use less oil, and once they have browned slightly on both sides turn down the stove and cover them quickly and let the steam do the work. Let me know how they turn out...
