The other day I went scouring around my property for trees to tap in the spring, and marking them so I could find them in the wintry landscape that is still around when sap starts to flow here. Unfortunately, the birches I found were far too small, still, to tap, but I did find many red and black maple trees that, while not as good as sugar maples, will yield sap, and later, syrup. The woods go deeper than my initial trek, so I may keep searching. Birch sap is definitely on my list. I also harvest wild garlic in April, and fiddleheads.
Oh, I love this video! This got me so inspired to try birch sap. I live in Sweden and I never tried it, which is weird because it is supposed to be a part of my culture. 😆 Next year I will do it! The place you live in is really awesome. The forest seems to be even larger over there. I so hope to have the chance to go there one day. I would love a long hike in the forest.
The forests here in Canada are pretty extensive, it's truly wilderness 🥰 pure bliss. You should totally try Birch sap, it's really easy and it's amazing!! Thank you for your kind words!
