Spike - Here's the "why" of the green cherry. The Mai Kai often has various cocktails "share" glassware. (Those that come in mugs -- Barrel O' Rum, Mara Amu, etc. -- don't, but that's a whole 'nother something.) Many drinks look very similar, especially under low light conditions and, to distinguish them so the servers know who gets what, they come with different garnishes. If you see what LOOKS like a Mai Kai Swizzle (my personal favorite, BTW...I love me some orgeat) but with ALL red cherries it's the "S.O.S.", and with a sprig of mint it's (or used to be) the "Deep Sea Diver" and with a cinnamon stick, it's the "Cobra's Kiss." The same applies to other drinks that share glassware. Now you know, and knowing is half the battle. (The other half is weaponized mayhem.) P.S. Thanks for putting out the good Mai Kai vibes into the atmosphere, I'm certain that contributed to their "we're reopening next year!" announcement!
That is a very tasty - and fairly easy to make cocktail! Like everyone else, I can hardly wait for the Mai Kai to reopen so I can enjoy these wonderful concoctions in the exotic palace!
FYI, Appleton Special is long gone (replaced by J.Wray Gold), andThe Mai-Kai likely now uses the more complex and tasty Appleton Reserve. But I like Spike's idea of using a pot-still rum. I'd give this a try with Hamilton Gold, Plantation Xaymaca, Rum-Bar Gold, et al.

green cherry is for fruitcakes and christmasy stuff edit to add: a diamondstone sharpening stone can sharpen a ceramic knife that doesn't have the edge it once did. just be careful with it
My mom used green cherries on some of her Christmas cookies. So some had red and some had green. And no offense to your Mai Kai but my one and only time there was after a long road trip from Minnesota and we had a reservation but were not going to get there in time, so called and said we’re going to be late. Consequently they made us wait a long time and then sat us in the aisle. And we had almost zero service. And it was so dark and the drink menu was so dark I couldn’t even see it without using the light from my phone. Then after the show we were moved to a different table with a couple strangers where we finally ate. So over all it was frustrating and everyone seemed pretty rude. So I guess if you’re going to be late, don’t even go. Locally our best tiki bar is Psycho Suzi’s, but the food is mediocre, and the drink recipes were amazing when they first opened at their current location, but the recipes changed, and we quit going .So I am my own cocksmith at home. And that has worked well during COVID. I like my own Mai Tai and other tiki drinks and other cocktails that I make, myself, at home.
I'd like to think that that was an isolated incident… I haven't heard much that kind of review before… it's a bummer that you got a bad version of an otherwise amazing place. :/ thanks for watching the show!!
Great cocktail, thanks for presenting it! Tasting note from me would be that it makes me think of what the honey would taste like in the world of Winnie the Pooh, not honey but something way better and golden.
I think that's part of it. There's also a specific reason The Mai-Kai does odd things with their garnishes. I'll explain the next time I'm on the show with Spike.

The Mai-Kai Swizzle looks very much like the S.O.S., which has three red cherries on a spear.
