A very interesting video, one of the best on YT about food in New Orleans, and an excellent commentary. I would add these three things that are a must-try in NOLA. Boudin sausage, Boudin Rouge, Hog's head cheese (Cochon Butchers, Herbert's Boudin and Craclings, Bayou Boudin A Cajun Eatery). Also stuffed quail (Commander's Palace, Restaurant R'evolution). For dessert, it is worth trying the spectacularly prepared Café Brûlot Diabolique (Arnaud's, Antoine's, Brennan's). The praline bacon at Elizabeth's Restaurant is also worth trying. Higher-end restaurants worth recommending are Restaurant August , Restaurant R'evolution, Shaya.

That dish was actually a special when we visited Cafe Reconcile. It is a blackened chicken stuffed with a cornbread and crabmeat stuffing and covered in a crawfish sauce. It was one of our favorite dishes in New Orleans but sadly isn't always on the menu at Cafe Reconcile.
