When he said his favorite part of the day was meeting with the sous chef who also happens to be his son 🥹
He's a great kid and a awesome sous chef
thanks for doing the vid bobby@@brmcnab
Ya my allergies were acting up a bit there.
Nepo hire
@@usdjxavi Or, and hear me out, he just followed in his dad’s footsteps and does a great job at a restaurant that needs only the best staff
The saucier has so much personality and charisma. Great representative for the restaurant.
Thank you for the kind comment!
That’s the best part of New Orleans! The people have so much charisma!
My dad is executive chef Tommy DiGiovanni! I love getting to see Mr.Bobby, Ms. Rocky, and my daddy on TH-cam So proud of them ❤
Love this series/concept! Prep cooks and sauciers have such an immense amount of knowledge about cooking you can’t even capture half of it in a single video
Reminds me of Vice before they lost their soul.
I so wish there were more of these, lol. I love this series too!
Absolutely,you said it.
Ive Been a saucier for 15 years.
@@denverrandy7143it's all about the sauce, all the best cooking
Did you notice that entire huge kitchen space was SPOTLESSLY CLEAN!
It honestly looked like it was never cooked in.
@@NittanyNation22definitely wouldn’t go that far
@@stopsign997I just did
I've worked in kitchens like that. A cleanly kitchen shows how much talent they also put into the food.
I mean... They knew there was going to be video taping ahead of time.
wow, they eat together. like a family. it is rare to see respect like this. many restaurants dont feed their staff.
Really?!!!! Every restaurant I’ve worked in New Orleans feeds their staff even the ones that charge you a dollar per shift they at least give you something you know
Yeah it speaks volumes, I have worked in restaurants for about 4 years now and it's rare a place gives you free food let alone feeds you like family. Respect! It's a different pain cooking delicious food while starving yourself :/
You crazy every restaurant I have worked in mexico and usa they have employees food court
I think its a New Orleans tradition. Everyone who worked at most N.O. restaurant feed staff.
Normal for some of the top restaurants
Arnauds is a New Orleans institution. I’ve eaten here several times throughout my life, my great grandmother required we eat there every family visit to the crescent city with show our respect dressed in a nice jacket. Just recently dined there and it’s still such a great experience. They are a true example of New Orleans fine cuisine. ❤
LOUISIANA ⚜️ Girl
You just took me down memory lane.✨
I need this food in my life. Just need to take a trip there.
I'm truly impressed, especially with the way he makes his chicken stock. It's labor intensive, EXPENSIVE, and nothing goes to waste. That mirepoix is top notch, the leeks are a nice touch.
working there since 93 says a lot about the people he works with and compensation.
wow - a restaurant having a designated Saucier is a throw back to an older time......really fun to watch this guy
The jazz brunch at Arnaud’s should be on everyone’s bucket list. Gotta experience it at least once. Lot of great food in New Orleans, but this is a whole different level. Incredible.
The embodiment of Southern hospitality
Except the bill was a bit unfriendly 😅
@@rarephoenixIt ain't Lucky Dog.
Lol amen @@rarephoenix
Wow. This kitchen is badass. I'm a Chef so I'm totally nerding out on those giant stockpots. So cool. Dude seems pretty chill as well. Awesome
definitely! we have to roll our stock on the flat top over night 3-4 times a week
everyone is a "chef" nowadays hahahahahaha
so true! you rarely see establishment using such quality ingredients to make stock in such a large scale, most of large scale kitchen nowadays are using stock powder for such a large setting. im nerding out when i see such a classic menu such as marchand de vin.
shut up loser@@devinmichaelroberts9954
Bobby’s personality is so relaxing
Just being myself!
It's why he's got his back brace.
I absolutely adored listening to Chef Bobby's down-to-earth NOLA twang and getting to see behind the scenes at one of the coolest restaurants ever! Thank you for filming this piece, it brought much needed warmth on a cold and wet northern evening. There's a lot of places I like, but I like New Orleans better 😉
He’s got more of a Cajun accent not necessarily a Nola accent. A Nola accent sounds more like a southern Brooklyn accent
Thank you for your kind words!
"There's a lot of places I like, but I like New Orleans better" Is that on a T-Shirt somewhere? If not, should be. The music, the food, the atmosphere. Been all around the world, literally, and there's no other place like it.
@@paolobrigante1761There are a lot of different dialects. In my decade there, I noticed plenty of them. The New York(Yat accent), isn’t really a New Orleans thing. It’s more of a suburb thing. Metairie, Kenner, Chalmette. Uptown has its own accent as well. It’s definitely a more southern accent.
Chef Bobby is such a wonderful personality. Love the way he speaks to the camera and tells stories. Wonderful!
Thank you!
I'll back up that guy, the 90s do still feel like 20 years ago
Continuity & cleanliness. You just know they're all going to be delicious.
Love the atmosphere of that kitchen. Lots of pride, respect for the culture, not trying to be something they're not. All can be said about Bobby to. He's a vital part of what makes that restaurant great, and love to see everyone being treated like family, on top of that he actually has family in the business. As a business owner you can't ask for anything more.
Thank you for your kind words!
So cool seeing Bobby in the chat. He is so so humble but Sauciers are incredibly underrated taste demons not even mentioning the creative side of things. Seeing Bobby and Sauciers in general get the love they deserve is awesome! Great Video!
I used to live in New Orleans and have eaten at Arnaud's many times. Always excellent and always an experience. Fantastic behind the scenes video.
Is it really worth the vistit?
@@Jbraj69i went to new orleans one time. didn’t go to this restaurant - but every meal i had was incredible and i highly doubt this would be any different ;)
@@Jbraj69 yes absolutely. Dinner in the jazz room is an incredible experience
this is by far, BY FAR, the best 'On the Line' episode yet
New Orleans is the best!!
Thank you!
what an absolutely lovely character, what a treat to get the spotlight on him!
Thank you!
Great Video I also worked as a saucier for a Private club for 34 years. Best time of my life. Its nice to see someone explain to the public what a true working Chef does. Spot on!
Thank ya!
Chef Bobby's pride in his city and his love for cooking shows through and it shows
Just so y"all know: the fancy restaurants in New Orleans have a dress code - so don't show up in jeans and a t-shirt cause they won't seat u!
Only a few.
I have been to Arnaud's. I will tell you, without hesitation, it is one of the BEST MEALS I've ever had!!! The sauces and flavors are absolutely delicious. If you are ever in NOLA, do yourselves a favor and go there! Also Jazz and great cocktails!
Great restaurant. Been there once and loved it. What a process they go through to gear up in size and scale to serve so many people eat in this popular eatery.
ayeeee.. i worked on this production as a 2nd AC 😊 and they fed us after. twas a treat
son & father duo in a place like that is jus awesome
My first stop in N.O. every time I visit (going on 30 years now.) Bobby is just charming.
Have been to Arnaud’s many times. They could cook a boot and you would want to eat it….
This was great! I could listen to Chef Bobby talk for ages with his brilliant personality, and his son has a fantastic speaking voice!
You really gotta love the enthusiasm and knowledge he exudes. His passion speaks, even if (like most folks in Louisiana) it’s like he’s talking with a mouth full of gravy. It’s easy to see why they chose him to be the spokesman
Much respect to this dude!! What a hard worker who loves his job!
Thank you and yes I do!
This was quite possibly the greatest video I have ever watched on YT. Amazing what goes on behind the scenes. Totally fascinating.
THANK YA FOR YOUR KIND WORDS!
The sauciest saucier!
the kitchen must have smelled heavenly when he took those chickens out 🤤
I wasn't expecting the video to end this early. The Chef has quite the charisma. 🫡🫡🫡
Great Dad, Great Son! Both are hardworking and with excellent ethics. Cooked with love. Thank you for this vlog.
Thank ya, my son is going a great job, I'm really a proud dad!
This chief is a master. No doubt the respect he has for this job is unreal. XD Great Vibes
So amazing, that kitchen looks so efficient w the large cook pots that lean into storage units my dream come true
I said if I ever went to culinary school I’d be a saucier. Most important person on the line!!!
Always go to Arnaud's every time I'm in N.O.
Thank you and we appreciate your patronage!
Can’t wait…eating at Arnauds in a little over a week🤤🤤🤤
How was it?
Love seeing this real slice of kitchen life - props to Chef Bobby & crew, that is one massive operation!
Talk about outstanding quality . Instead of just using the bones for their stock they literally use about 30 whole chickens. Unbelievable to put out that many covers and have top notch recipes .
That was FAR more entertaining than I expected. Love it. I want to see the full day now.
Fascinating to watch and amazing energy.
Smashing the box is brilliant! Wish I'd figured out that when I was working kitchens
I love this chefs love and respect for the food, staff, restaurant and city
This was one of my favourite episodes!!
I could watch him all day.
Mad respect for this fella.
I love this series! & those dining rooms are decorated beautifully! 💖😍
What a beautiful place. The food in New Orleans is just phenomenal.
So he's basically along for the ride?! lmao. You the dog dog. How can ya have bad food with a happy camper like him! What an attitude, wonderful!!
"it will open and clog your pores at the same time." hilarious!
I love this series, and this has been my favorite episode so far!
Thank you!
looks so awesome!! lets go!
Excellent show, I’ve eaten there a few times and it’s great to see the where the magic happens.
What a lovely group of people ❤
“ it all starts in your heart “ ❤️
Thank you so much for your wonderful recipe and for helping us take care of our health. Wishing everyone who is watching this video always healthy, peaceful, and happy❤
New Orleans is America's true dining city. The passion, and tradition in the food is without question among the best in the world. That was great to see
We need more of this series
Outstanding!
My first "management" job in a kitchen was as a saucier. I really enjoyed watching this.
so inspiring Mr Bobby
New Orleans residents have more love for their city than any people I’ve met.
Their food alone gives them enough to be so proud.
Even if they don’t claim us up in northwest Louisiana. 😂
This is amazing!
"It all starts in your heart". This guy has got a great personality.
This guy is awesome!
Love it! Can’t wait to visit!
Well done, great insight into one of Nawlins best 🎉
The unsung heroes of our times.
Love the visit!
Adorei o vídeo!❤
This was really awesome - thanks.
what a charming guy, so humble
Thank you!
this is now on my bucket list
awesome video, thanks!
sooooooooooo fricking interesting. thank you!
Ótimo vídeo!!
Wow superb 👏 👌 thanks for sharing ❤🎉
I enjoyed listening to him!
Wow I really love this one
this is the best so far of a great series. I may be buying a plane ticket and booking a table at Arnaud's!
Come on down to Nola, we'll have a table waiting for ya!
Love this ❤
Adorei o vídeo!
Great video. Looks delicious !
Fascinating! Up in years now my wife and I will likely never get back down there. I would love to have recipes of all your sauces...but on the other hand your recipes are figured by the gallon (s). Thank you.
I love how he says French dishes in a southern accent hahaha
Look up Louisiana culture and read a little history. It's technically a creole accent
Adorei o vídeo!😊
Love this
Holy cow, that’s quite the operation, looks like excellent food, cheers🎉
Thank you!
What an operation😮 Kudos guys.
Fantastic!
Made me hungry, Thank you for the insight.
Back before the war broke out, I was a saucier in San Antone
Was you thinking bout dangling your dice on lance’s forehead?
Love that movie (:
