I’ve been a chef for 23 years now. Worked in some cool places, all over the world. When ever I get burnt out or lose interest I refer to Marco’s career and it always gets me back on track. Keep it simple, have a standard and cook what you want to eat but always remember the standard. Not for others but for yourself. My advice for young chefs is to go for it and work with the best people you can. Walking into a kitchen and feeling you’re at the bottom is a good thing. It’s lonely at the top.

He speaks the truth. The more i bitched and complained and always found an excuse, i wouldnt get anywhere. The moment i said im gonna get the job done by any means and take full responsibility for everything and anything in my kitchen, i climbed up to the top and have been rewarded for it. Still have a lot to learn and a long way to go. But he speaks the truth.

Force your self, it doesn’t happen over night. You fail but at the end of the day you tried and just keep pushing. You will see your self get stronger in a matter of days or years all depends everyone has there own path but never give up. Much worse to sit in pain with thoughts of what we should’ve done
@@alcek1640Well after that particular accident, at work ironicly, i would like to see you try ,could not walk, 2 broken wrists , alway's handy for a welder, filt up to the brim with whatever diabolical mix of meds they had in the drip the first day's i did not not even know who or where i was... there are levels too not feeling well.
