Oh Ms. Debbie.This brought back memories of my Paternal Grandma's kitchen. I grew up in NY in the 50's & 60's, but she grew up there. This is how she made rice and peas. As I helped her grate the coconut she use to tell me how it was when she was growing up. I remember she only used Uncle Ben's par-boiled rice. To this day when I make rice and peas I only use par-boiled rice. Mama was from South Carolina and only used Carolina long grain rice for her dishes Lol. From soaking the salt fish to make cod fish balls, to grinding spices for the curry. I remember it all and it fills my heart. Thank you for the memories. Manners and respect! Big up on your beautiful self. I love it.

I now live in America,but this outside cooking take me back to my childhood growing in the Islands.My mother would grater the coconut use the milk for the rice,and peas and the coconut for bread.The outside oven.I know that long time Miss Debie.Love this,I enjoy every minute.

My late mum (old school Jamaican, born 1926) would occasionally add a pig's tail to the cooking peas, but it's not necessary. She wouldn't use as much coconut thought. But her rice & peas was from heaven.

Things have changed so much since I was little. I didn't learn much from my mom. Great-grandma and my gram taught me a bunch. Isn't it amazing that all these new things that are supposed to make our lives easier we spend a lot of time trying to keep them clean and working. I love your videos. My mother is Jamaican. Born in Brown's Hall St Catherine. She has lived in the US now for more than 60 years. My mom did cook some Jamaican meals, but then she would tell you she could not make good rice and peas. Thank you for your demonstration. I will be using canned coconut milk and canned peas. I have got to try it again and just let it cook down. Mine is usually mushy or over cooked.

I haven't cooked or eaten like this since I was eight-nine when I left JA. I can't even remember when I started cooking, but this is how we did it, Thank you!
