You guys are known to make delicious bean stews and soups! I love that y’all are not afraid to use spices and really make it delicious! My favorite bean stew is the Puerto Rican style beans - you simply cook up a big batch of pinto or red beans and after they are tender, you add sautéed onion, garlic, bell pepper, cilantro, a packet of Goya Sazon, adobo, cumin and tomato juice and simmer it on low for an hour. Great over rice!
This recipe is very similar to my variation on minestrone soup. Yours is quicker! Mine is great for keeping some frozen in the freezer. Obviously I start with mirepoix, lots of garlic and I add potato, mushroom and some fresh peeled tomatoes (2 or 3 depending on size). One litre of vegetable broth, some Italian herbs (mine has dried capsicum/bell pepper in it too funnily enough), 2 bay leaves and extra water if needed. I add a cup of rinsed red lentils and 1 1/2 cups borlotti beans I make in the instant pot (you call them pinto beans in the States). I always cook the pasta separately because it sucks up the broth otherwise. It truly is the king of soups and I believe it's one of the reasons I recovered from stage 4 breast cancer, "miraculously", as my wonderful mastectomy surgeon used to say. I had teenaged kids and he, and me!, really wanted me to live. I had every treatment - surgery, radiotherapy and chemotherapy - and, although I had been a vegetarian, I cut out eggs and dairy which I've always believed made all the difference in my recovery. I've just seen my second grandson born 2 days ago, and I am just so, so grateful. I will follow the recipe for the magical herb and spice mix. It looks great. I have a Spanish mix I put on cubed steamed potatoes which I air fry then serve on a bed of parsley and green onion with lemon juice. It gets expensive when you use a lot of herbs and spice mixes all the time. I've been thinking I need to replicate that recipe too. So, I have some spicey work ahead of me 😅 Thanks for the inspiration you two 🙏🏻🙂

Brian made this soup for lunch for my daughter and myself. It was freaking delicious. She said mom I think I like this better than your white bean pozole! Going in my regular soup rotation!
This weekend I finally got around to making this. It was super good! Mine came out as more of a stew. There was some liquid...but not much, certainly not as much as you have in the video. That said, soup...stew...it was tasty either way and will definitely get made again!

Just made it tonight; it's a good one! I did add some onion, carrot, and tomato, doubled the pasta (lentil penne) and used 8 cups of liquid. However, there's a bit too much clove for my taste; I'll cut it in half next time. You've also introduced me to dried bell pepper! I chewed on a piece right out of the bag and I like the change of flavor from fresh; similar to what happens with sun-dried tomatoes. I'll be using it instead of fresh bells the next time I make chili.

It’s awesome that you’re making your own blend, but you can also buy Lebanese Seven Spice at Middle Eastern markets. They have tons of wonderful spices and they usually have better prices than large chain grocery stores. The soup recipe looks great! I’ll give it a try soon.

I've seen other Lebanese 7 spice blends out there but the Schwartz brand was a bit different. The version I came up with more closely resembles their blend. But I'm sure the other 7 spice blends are good too. 🙂
When our son was in daycare, the “kitchen lady” would make wonderful homemade soups that rival yours. The little kids were ignoring it based on appearance, including our son, until we started saying, “the uglier the soup, the more delicious it is!” like it was a known expression. Minestrone was thereafter a favorite!

There is an excessive heat warning in Phoenix, AZ and it is 112 degrees? The logical thing was to make soup, duh! This was my first time using better than bouillon instead of boxed broth since it is an awkward 1.5 boxes worth. It is really good, but I don’t know if I would call it soup? I have like barely any liquid left after cooking it. (I actually some added water to it midway) Like more of a chili mac? It is more of a sauce than a broth. Maybe next time I will try it with two boxes of broth and see if it is a little more of a broth consistency. But it’s still really good! I would make this for guests that were not WFPB.
I am really glad you liked it! It is one of my go to easy soup recipes. I have never had an issue of having too little liquid in the pot. I usually get a nice broth at the end. Go ahead and use more broth at the start and see how it turns out. Either way, I am sure it will be tasty. 😀
@@mizfrog4776 - it's high in protein, there are plenty of other recipes with higher carb count - see dr MacDougall and his Starch Solution. Where you lose a lot of weight, btw...

I use fresh onion all the time. 🙂 I just didn't want to add another texture and extra steps to this soup. This one was designed to be super tasty and super easy to make. Also, I already have a bean and onion soup. 🤣
Erini is correct. Their version didn't have allspice. I saw other 7 spice blends out there but none of them seemed to match the flavors I was aiming for. So, I made my own interpretation of it. Although, I haven't figured out what to call my version of the spice blend. 😆

I added this seasoning to chopped sweet potato and baked until soft. It was amazing mixed in my salad with some hummus and lemon juice dressing! X

I use fresh onion all the time. 🙂 I just didn't want to add another texture and extra steps to this soup. This one was designed to be super tasty and super easy to make. Also, I already have a bean and onion soup. 🤣

Jessica, every time I try to print your recipes from your web site the background on preview is black. I do not print because it is a waste of ink. I either skip making the dish or have to mess with multiple screen prints.

I saw the recipe for the Spice blend but I didn't see how much it said to add to the soup. I would probably just start out with a teaspoon wait an hour taste it another teaspoon etc etc LOL
