Gluten Free Bagels

  • Make excellent artisanal gluten-free bagels. Crusty on the outside and soft and chewy on the inside.
    Recipe:
    600 grams of Frankie's Bread Mix
    1/4 cup of salad oil
    2 cups of tepid water.
    1/8 cup of sugar
    Sesame seeds for garnish
    Method: Pre-heat oven to 375F. Also get a large pot with at least 10cm (3.5 inches) of water boiling. In a stand mixer combine bread mix, oil and water together and mix for 2-3 minutes until really well combined.
    Using an ice-cream/portion scoop. Scoop bun sized amounts onto pre-cut bun sized pieces of parchment paper.
    With wet hands press and smooth out buns to look like bagels. With a wet finger, make bagel holes.
    Add sugar to boiling water and stir. Add bagels a few at a time to boiling water and boil each side for 1 minute. Remove from water and set on baking sheet.
    Bake bagels for 20-25 minutes (or until internal temperature reads 99C (211F)). Let cool completely before slicing and enjoying.

    I have not made these YET but they look fantastic! I have also never heard of that flour brand/blend so I am excited to order it. It has been a long time since eating a GOOD bagel and these look mouthwatering!!!!

      Hi. Thanks for the comment. If it's Frankie's bread mix, then no. The yeast and everything is already added to the mix.

    Hi Chef Joel - I have C4C GF flour that I have been using for a couple of years now. Is it possible to make your bagels recipe using the flour that I already have

      Hi there Raquel,
      Thanks for commenting. You can certainly try. Using a general all purpose flour blend you'll need to add yeast, a bit of sugar (to feed the yeast and get it started) and watch your viscosity as when baking gluten-free bread it will need to be much sloppier than a traditional wheat yeasted bread. Use the bagel video as a source of stickiness guideline.

      Yeah, Frankie's is working on getting itself onto Amazon to offer its gluten free all purpose flour onto the market in the US, and further. It should be available in September.

      Just a little bit of oil, sometimes, but the sheen comes out when you boil the bagels in the sweetened water. Thanks for watching.
