I made this with substitutions, and it was still PHENOMENAL!!! I felt like a 5 star chef. I didn’t have shallots, so I used one large white onion, I didn’t have heavy cream so I made a substitution with whole milk mixed with butter, and tragically I didn’t have ricotta, but even still….even still!!!!!! This dish came out …. Incredible.
I'm literally laughing out loud...you said it isn't "heavy" - a dish that has a sauce made with heavy cream, added ricotta, then mozz and then parm!! - what would you call "heavy", Laura?!! LOL It looks absolutely amazing and I can't wait to make it! This is serious comfort food to me and perfect for these cold nights as we wait for spring to finally appear. Thank you for this!
"Heavy" is very subjective ! 😉 😀 Don't forget that she is Neapolitan. Neapolitans love dishes that have a certain substance. I know something about that because I come from the same region. 😊

I make a Midnight Pasta, Simply Mama Cooks recipe, which is very similar to this except it uses a premade pasta sauce, your favorite. I just add a bit of butter and Parmesan when I reheat leftovers which are always better than the first time. I’ll certainly try your method for sure. Being an Italian gal myself, I have everything I need in my pantry except the ricotta.

I tried this recipe last night for dinner. There were elements I really liked and one element, well... What is the point of the ricotta? Yes, richness, but the cream does that. I hated the texture that the ricotta put into the sauce. I didn't find it added anything other than a yucky texture. I will absolutely make this recipe again, but without the ricotta. And that was an amazing tip re: using the jarred roasted peppers rather than roasting them myself, especially on a hot day!
