You converted a traditional recipe to regular stew. Two three spoons of oil will do nothing to fitness and weight. Overcautious nature stopped you from enjoying a traditional recipe.
To remove the access water of the chicken one can put the meat on a low heated pan without pouring extra water. Once the chicken releases its access water, we can put the ingredients and boiled water to cook.
No no that's mejenga paat. Schechuan pepper leaves. Thr r so many local masala available in the hills of northeast. Better to visit arunachal/ assam/ Nagaland to know more about those masala. Those are the secret recipes of our northeast.

Instead of all those leaves, put Dried bamboo shoot if you can find some. That's way better.
