I just made these as 6 jumbo muffins. I left them in the 425-degree oven for 8 minutes and then continued to bake them at 350 for another 20 minutes or so. I added some chopped pecans to the batter and cut sugar slightly to 1/2 cup. They are divine, like all of John’s recipes ❤️

I love how you explain why you should/shouldn’t do certain things while baking. Ingredients not being at room temperature sounds like it’s why I have had some trouble with recipes in the past, so thank you for the explanation. And I am glad you made this video just when I needed to use up my last three bananas 😁

These are the best muffins I’ve had!!
I did make a couple little changes. I toasted about 18 pecans and chopped them then mixed them in.
I was out of eggs. Banana is a great egg substitute but I also added about a 1/4 cup of unsweetened vanilla almond milk to make up for the moister the eggs would have added.

Just made these today and they turned out scrumdiliumptious!!! So soft, so moist, baked even all the way through. I subbed equal parts oat flour(I omit the salt when using oat flour), 1/3 the amount of butter for olive oil, and equal parts brown sugar. I could even add more sweetener next time, these are not overly sweet. Added cashews and pecans on top CHEFS KISS thank you for this recipe!

Just made these and they turned out great!! Some banana chunks still were there, but like John says, that’s not a bad thing!! 😊
