If you don't like salty muffins, I would recommend doing half a teaspoon instead of one teaspoon. I did 3/4 teaspoon and it was still pretty salty.

Tried the recipe but with adjustment to ingredients I have at home. It's really yummy. Had to substitute yogurt with coconut cream. Microwaved my banana with the butter, before mashing it. Used 1 cup brown sugar and 1/4C white sugar. It came out so good and the house smells like I'm in a cafe. Thank you for sharing the recipe.

I love every recipe of yours that I’ve tried! Anytime I give out my baked goods with your recipe as gifts. People freak out how amazing they are. I made your banana bread muffins today. Which were totally delicious! I made a couple little changes based my own personal taste. I put cherry Greek yogurt, instead of plain regular. I added about some dried rough diced cherries and lastly lemon icing. The tangy mixed with the banana and cherries! Omg, drool!! Thanks for posting the best baked good recipes online! Seriously!! Btw, do you sell any published cook books? I want to get them all if you do!!

I love muffins. If I had cardamom and allspice I’d be making this right now 🤤one of my favorites that I made up are cherry, chocolate chip, toasted coconut and almond. It’s really busy sounding but the crunch from the almond and coconut plus the tart cherry and sweet mini chocolate chips is amazing.

I made this muffins over the weekend and they turned out delicious and shared with friends and my employer. Everyone asked for the recipe. I only thing I did different is add less sugar since the bananas were already sweet and I also spooned some cinnamon, small amount of sugar and butter in the middle of muffins and they were absolutely the yummiest. I’ll make them again and again.

So I just made this with 50g less white sugar but 25g more dark brown sugar, 1 extra banana and adding in natural peanut butter roughly folded into the final batter, into a mini bundt cake. IT WAS SO. MOIST. SO GOOD. It also came out of my silicone bundt mould perfectly (3 didn't make it but that's my fault lmao)
I can't wait to share the photo when they're ready! It's for my birthday this weekend. :)

I made these yesterday, and OMG they were so delicious! They were so light and fluffy, great banana flavor, with just the right amount of spices! Unbelievable! I blackened my bananas since they weren’t ripe enough, but had to use 6 bananas. To get the 1 1/2 cups guess my bananas were on the smaller size. (Really glad I had the extra ones to pop in the oven.) Mine only made 12 muffins, which was fine. Most went into the freezer for snacking later. Thank you so much for sharing this recipe!! (Well worth buying the cardamom at over $8.50.) Can’t wait to bake other recipes you have!

I just made these and they are divine! I added a glaze on top and it was absolutely perfect!! Also I did 1/2 cup granulated sugar and 1/2 cup brown sugar

Fun fact: 'fuyu' means 'affluent'. But I've never heard of the other name (in fact I'm not Japanese; I just speak some Japanese). BTW, I love the fuyu variety, too.

    THIS IS THE ULTIMATE RECIPE.
I had really good results with this. I used 7 small bananas (and I bet it still wasn't 1.5 cup) and put ghee instead of butter since that's what I had. Also mixed in some crushed weetabix coz my bro likes crunch. These are the softest, lightest, most delicious banana bread I've had. Thank you ❤️

      Is it hard to make?

mztwixed to start, get about a dozen vanilla pods. Next, about a one liter bottle of vodka. You will have to pour some out to make room. Submerge the pods. Put it in the pantry. It will be a at least 6 months before it is usable. When the fluid gets low, add more vodka. About once a year add fresh pods. You can use the old ones for vanilla sugar. Or leave them to stack up. My original extract has been added to in this manner for years.

I accidentally made all of your banana muffin recipes thinking it was the same (bought yogurt and one of the other recipe didn't need it and thought I was going bonkers) and I think this is the best one. I think this recipe is the best to make into banana chocolate chip muffins! Perfect rise, great flavour, soft and moist and soo good when warm.

Everytime I make banana bread it has a rubbery texture. This recipe was perfect and so soft! My kids actually wanted seconds and they never want the banana breads I've made before. Yummy!

I put cut up in small pieces dried apricots, which is what was suggested in the old Joy of Cooking recipe book. Love that tart added to the banana. Also, a little added wheat germ adds a little extra flavor.
