    This channel is honestly one of the best cooking channels out there. Love the presentation, the recipes are great and obviously well thought out and tested. It’s very disappointing to watch a favorite channel get big and try to keep a consistent schedule and you can notice the content being compromised in quality for the sake of keeping schedule, but that does not apply to you. Keep up the really really great work

    I have been thinking of Corn Muffins for the past couple of weeks now, so I used a basic muffin recipe & added a mixture of fried chopped onion, diced bacon, half a tin of drained corn kernels & some fresh chopped garlic chives. Delicious. I didn't add grated cheese though as cheese sets off my migraines but you are welcome to add that if you wish 😉 .

    For that big muffin top try a high heat for 5 minutes then turn down to the heat intended, it works! I fill mine with a bit of homemade jam too 😍

      If you don't have jam ,I use pie filling. I made a peanut butter and jam traybake tonight, if it was delicious.

    I'm happy you did the recipes in grams. It made the process faster. I also loved your hack for subtracting away from the batter bowl to get the correct proportioning. I made the blueberry and banana walnut muffins tonight. Family loved them!😊

    Suggestion for a new muffin: Orange Cranberry w/ Dark Chocolate chips. Costco used to make them and they were GLORIOUS. Seeing your jumbo muffins reminded me of them.

You have easily become one of my favorite people on here and I love the range of “doability” in your recipes! From your weeknighting videos to your more involved recipes, there’s something for every occasion and ambition level! You are awesome!
    A little tip I learned for blueberry muffins I thought I might share: tossing the blueberries in some of the dry mixture before incorporating them into the batter helps keep them more dispersed throughout, and keeps them from sinking to the bottom! Thanks for sharing these amazing recipes with us!

    This is the absolutely the best muffin recipe I have ever made. I even bought the pan and liners Brian uses in the recipe. Blueberry was the bomb and raspberry instead of blueberries is great. Just made the pumpkin spice ones and they are wonderful. Just put some sugar in the Raw spiked with pumpkin spice seasoning on top. Thanks Brian Great Job!

    Can I just say, I've made a lot of muffins over the years and this recipe is fantastic. I live in Sweden so i cant get buttermilk (used milk/yoghurt 50/50) but this produced what I would call "bakery" quality. They stay juicy and aren't only delicious right out of the oven, they stay great. Thank you.

      In germany we have Buttermilch which apparently isnt the same as american Buttermilk. tried it with german buttermilk still was great.
      European Buttermilk is the by product of butter making while american buttermilk has turned into a fermented dairy drink.
      There also seems to be conflicting information if you can just replace it with european buttermilk or have to use a different product.
      As the buttermilk in the video seems to be very fluid like without solid tuff in it i decided to just use european Buttermilk.
      every other substistute was way thicker and joghurt or cream cheese like
      EDIT:
      Traditional buttermilk is still common in many Arabic, Indian, Nepalese, Pakistani, Finnish, Polish, and Dutch households, but rarely found in other Western countries.
      so it seems that in germany we actually do have american style buttermilk atleast somewhat.
      i have checked the nutritional facts and they are very close. fat content, protein and sugar are nearly identical, also the Ph seems to be around the same. so dont know.

      As an American, buttermilk isn’t a normal thing at stores for us either. You can make buttermilk at home by combing one cup of milk (245g) + 1tbsp lemon juice, mix and then microwave for 30-45sec and then let it sit on your counter 10min. Boom you have buttermilk!

    I’ve made a ton of different muffins and these have THE BEST texture & moisture level of any other recipe I’ve tried! I’ve been able to create different flavors using the same basic profile of wet to dry and I swear it works every time. Solid recipes, Thank you for sharing!

    Brian, I watched your video an hour ago and couldn’t wait to get into the kitchen to make these blueberry muffins. I was fortunate to have all the ingredients at home. I cut the sugar almost in half because I don’t like a super sweet muffin. These just came out of the oven fifteen minutes ago and my husband and I immediately wolfed down three ( made them in smaller size). They are divine. Thank you so very much for a great recipe. I’ll keep this one close by.

    I made the blueberry muffins today. They're absolutely fantastic. I followed the recipe exactly as written, which is highly unusual for me. The only difference is that I added some of the lemon zest from the topping right into the batter. And they took 40 minutes to bake in my oven. They looked and tasted amazingly good. Love that the recipe is all in grams too. Makes me a happy baker. Thank you so much for posting this. New subscriber for sure 😃

    BRI, you did not disappoint! Thank you for doing these so soon after I suggested it. I can't wait to get home and try these out. They look like perfection. Uh, I also need to get the muffin pan. I like that they look narrow and tall compared to my usual jumbo muffin pan, like a hybrid popover & muffin pan.

    I made the double chocolate muffins this week. My husband loved them! I didn't make jumbo muffins but 12 regular sized muffins which came out very 'jumbo'. It was a hit- will definitely make again but next time will use semi sweet or milk chocolate vs 70% cacao because my daughter and I just prefer the extra sweetness. For example- she had her double chocolate muffin with vanilla ice cream for breakfast. And that made sense to both of us. Thanks for a great recipe. My husband and I really enjoy your channel!

    Hi from Melbourne Australia, loved all three recipes. The pumpkin one I would peel and cube, toss in some melted butter combined with nutmeg and toss until all the pumpkin is coated - then roast until golden and continue. Makes for a more umami flavour.

    I made blueberry and double chocolate muffins last night and I can’t thank you enough they were super delicious and just the perfect texture too. Since I don’t eggs substituted 2 large eggs with buttermilk and rest of the ingredients followed as it is and oh my goodness it looks and tastes super moist and delicious.     I have made muffins with each of these recipes, and they are hands down better than any muffin I've ever had. I also like how you not just give the ingredients and the process in your videos, but you explain what each thing does and how it affects the result, and how you left that mistake in there when making the chocolate muffins. You're actually educating people about food science rather than just giving out recipes, not many other channels do that. I'd love to get your take on an Apple and Cinnamon muffin recipe.

    THANK YOU! My favorites so far have been Banana Walnut and Blueberry with that delicious lemon sugar topping. I've made these many times and they're always a huge hit! The recipes are a breeze to follow. Would you please, please, please consider adding Cranberry Walnut to the mix? Maybe with orange juice or zest?

    I tried the blueberry ones today, they are great. Didn't had any tall cupcakes mold though so I made do with 1 cake pan and 3 large ramekins in which I place the paper in a way that it would guide the cakes to be tall.
    Worked better in the ramekins than in the cake pan (that is black though) somehow but the cake pan was at the back, possibly protected a bit from the heat.

    Brian, thank you for the muffin recipes. I have tried them and have had great success. I couldn't be happier! I used a regular jumbo muffin pan, filled them completely to the top. The tops rose to a perfect dome....I mean a DOME.....wow.....they looked and tasted as delicious as any muffin I have purchased from a bakery....in fact better because I made them myself! How fun! Thank you!

    Made these at 9 at night. Did minis instead of big ones since I didn’t have the pans nor ingredients for big ones. They came out great! Sweet and somewhat breed like. My mom and I love ‘em. Recommend topping with a lemon drizzle if you got nothing you can put in em.

    Brian, Great recipe first of all! I also wanted to say that I really appreciate you adding the recipe details in the description. It's very helpful when I'm at the grocery store shopping for the ingredients, and not having to randomly browse through the video in front of the yogurt section lol. It's the details that count.
    Last thing, do you mind adding the Amazon affiliate links for Canada as well. I ended up buying almost all the 'tools' (muffin pan, scoop, baking cups) but I don't think they work the same way for you - amazon -affiliate-wise.

    I love making jumbo muffins. They’re easy to make, but provide so much tasty happiness. I use pastry flour which tends to produce a better texture. I really like the lemon sugar idea. I think I’ll try that next time.

      Pastry flour is a good call, it has less protein that regular flour. Less protein = less gluten = less likely to overmix the muffins and make them tough.

    B-rye. I made the first recipe. I didn’t have all on hand, used half and half and lemon juice instead of buttermilk and used same weight of fresh strawberries instead of blueberries. This recipe is crack my dude. Keep it up. My wife is all about this. Thanks!

    Was really afraid after the third muffin that there wasn't going to be a 'Let's eat this thiiiiing.' Didn't disappoint. I'll be trying these soon!
    Also-is there a brand of cocoa powder that you recommend? Is there a noticeable difference between the quality of cocoa powder brands?

      I haven’t noticed difference and I don’t have pref, but I haven’t really dug into it. Dutch process is usually what I have on hand

      Valrhona cocoa powder is hands down the very best. It’s a bit pricey but so worth it. Available on Amazon.

      @@tinalouisewilson i beg to differ Belmont estate, jouvay, and Roma Cocoa powder extremely rich in flavor as much as I love them I won't be so bold to say they're the best as i haven't used all cocoa powder on the market.

    Love how you include the scientific reasons for various things (such as using extra egg yolks without the whites because too much egg white protein changes the texture etc.)
    It’s little tips like that which make successful baking!
    (Maybe you could mention in one of your baking videos that sugar is actually considered a “wet” ingredient…)

    We made the banana nut this morning! Oh my goodness, so much goodness! I subbed pecans in for walnuts since that’s what we had. Turned out terrific! Thank Bri! Love them!

    Hey Bri! I love making a good big muff top. I've found when using the classic 12 muffin pan to overfill each cup until it's almost overflowing, then stick it into a 375 oven for 5 mins, and then lower the temp to 350 after that for about 20-25 more minutes. I don't know if that actually does anything, but my muffins have always had a great oven spring, and moist muffins when using that method! These also look amazing as well! I'm going to definitely try some of these. Cheers!

      I've had good results with the hitting 'em with high heat first too! I think it's recipe dependant and yields good results for those times that you're ~suspicious~ of the way your batter looks

      There is a lot of leavening in these
      So hopefully no need for high heat. In my
      Trials muffins were way more sensitive to drying out that I had expected

I am going to try making my favorite Panera orange cranberry (or cranberry orange) muffins and your lemon sugar tip could be made into an orange zest and raw sugar topping for my project. I won't mention much about how disappointing Panera is otherwise (ahem). Happy Autumnal Equinox, too, from we who slowly turn into leather in the infernal heat and wicked sun of the southwest!

    🤤 I cannot wait to try the banana nut muffins. I've been hunting for a good recipe and always come up disappointed. This one looks amazing 😍 and again love the weight measures on the bananas. I hate when a recipe just says "2 mashed bananas" - like all bananas are NOT created equally. Lol.

    wow, I am super impressed by how my blueberry and chocolate muffins turned out. I used 3 whole eggs for the convenience, and they turned out delicious as far as I'm concerned. I have other recipes I've been using, but boy are your muffins soft and moist. I'm tweaking all my other muffin recipes to include sour cream for that additional tenderness. I will say tho that your recipe makes more than a dozen regular sized muffins, even though I tried really hard to fit the whole batter into one 12-count muffin tin.

    Loved the simplicity of these jumbo muffins! As for the moistness, I personally want to see some moist crumbs ( not batter) on my cake tester, as even out of the tins the muffins continue to cook a bit more. I'll definitely be making your recipe as the flavor ratio looks spot on. 😉

    Love getting little additions to try that add something extra to dishes like the butter, lemon sugar, and the brown sugar in these recipes. I bought the pan and muffin cups because I wanted to harmonize and then minimize the jumbo muffin pans I have. Note the muffin cups you have linked have a 2 in. diameter bottom and the pan has 2-1/4 in. round bottom. Amazon sell the 2-1/4 in. bottom muffin cups. Not a big deal because they fit one of my other jumbo muffin pans which I had not previously found muffin cups for. I wasn't looking on amazon either.

Besides your absolute gorgeous looking versions of blueberry, banana, chocolate and pumpkin, I also loooove apple cinnamon muffins with streusel on top, so I‘m gonna try and modify your blueberry muffin recipe and put some streusel-dough on top 😋.     I’ve made all 3 muffins. The chocolate was ho-hum, but the blueberry lemon is FANTASTIC! Best I’ve ever made.

      ​@@ianscianablo8507 I have a couple of thoughts on that. The first and most obvious is add maybe a tablespoon of instant espresso powder to the dry mix. A small amount of coffee in chocolate baked good turns the chocolate flavor up to 11. Another thing to try would be to make any or all of the following substitutions: trade the oil for clarified butter, trade some or all of the white sugar for brown sugar, trade some of the sugar for molasses. All 3 of these will bring more depth of flavor than standard oil or white sugar. Finally, you can add some contrasting but complimentary fruity flavors to the muffin. Orange peel mixed right into the batter is one option, orange goes fabulously with chocolate. Cherries could be another choice, again cherries are a fruit that pairs extremely well with chocolate.
      Any or all of these should augment these muffins nicely.

    I have overriped bananas at home pretty often, so all my family, friends and me felt in love with this banana muffins. I also experimented and added apple sause instead of banana and the result was pretty interesting too in my view. Thanks again for your recepies and work, you're incredible!!

    Have made all versions of these muffins including once when I forgot to add the pumpkin spice. These are wonderful recipes. Most muffins are too sweet and cupcake like. Actually bought the muffin tins and liners…….a worthwhile purchase. Incredibly well researched recipe. Just the best.

    Just a quick thank you for all your fantastic recipes! I have baked so many now. Waiting for my giant muffin tin to try those next.

    You have shown me that I can knock out fantastic bread at home (who knew?!)

      I have a silicon bundt pan and it is also no bueno. And it's impossible to clean really well so it's got this coating of sticky old baking spray. I bought the muffin pan you've got, thinking I could also use it for Pop Overs... thanks. You're so freaking great.

    These blueberry muffins were amazing. I didnot have sour cream or butter milk so I used whole milk and creme fraishe instead. I also used avocado oil, a tad extra butter and halved the sugar with brown sugar. They turned out really good!

      It's not quite true. The pumpkins generally used for canned pumpkin are actually a hybrid. One of the original sources was butternut squash, though, and they inherited some of those characteristics. (See username, I have a pumpkin problem).

    I made 12 small muffins and had leftover batter. I sprayed ramekins with pam spray and some flour and poured it in. It is a small chocolate cake! This is an awesome recipe, thank you!!
