      When the chain comes to a knot. The fiber orientation changes. In between the knots, the side plate cuts the fiber. When cutting through a knot, the top plate is cutting the fiber. That’s why both side and top need to be sharp and are filed at basically the same angle.

    Would they be changing during The Cutting process and pressure on the saw when the corner is starting to get knocked out you would have to force more pressure into the cut and that's interrupting the swimming effect on the top plate going up leveling out and coming back down "exaggerated for explanation"
    Or I'm thinking of something during chip flow interrupting that and having material still under the top plate or having the space already full between the cutters while they're coming around and through the kerf

      Their jobs switch when the teeth come to a knot. The fiber angles change from parallel to the log to “roughly” 90 degrees. It’s not a perfect switch because the fiber angles are not perfect.

    Based on how you describe it, I would also say that if you came to a notch or knot where the orientation of the fibers change relative to the cut

    In response to your question at 9:30, I suspect while bucking (cross cutting) that any time I'm cutting through a log at a point where there was a limb attached, that will change the jobs of the two plates. But I don't think that is what your really asking.
