As a chef myself, I tell a secret when making dosa idly batter.instead of using broken urad dal,use whole,deskinned urad dal or they call it Gola. Means whole. Wash the urad dal 4-5 times until the water comes clear.soak rice separately,add half spoon of methi or Fenugreek. Soak only 4 hours.not more than that. Don't use the mixer to grind the urad and rice,use stone grinder only.dont add salt.add salt to the batter while you preparing the idly plates to keep it in the stream.

Don't add soda or Eno it's not good for gut bacteria, natural fermentation is the best method
Chilli is new and excellent idea for fermentation and I think it would taste great because of the chili 🌶️ flavour.
It really works! I did not use the old water and it was still fermented really well in the morning. Idli was so soft.
