I would usually just try and go to a local store and try mandolines until I find an acceptable one (that's what I did with my current one, but it is just acceptable, not a good one), but I really like the sound of yours.
On her Instagram she mentioned she got it at a flea market, but it's a type of "bowl-back" or "potbelly" mandolin. They sell them on Folkfriends.com and there is a site for restored vintage mandolins at mandolinluthier.com As far as the sound goes, I remember Kate mentioning she really tries to find a good mic placement, and records in a "dead room" to block out unflattering reverberations. I imagine she'd also know how to EQ and apply a spatial reverb on her whole project to enrich the sound.
