Instead of peppers, I added cilantro and celery, which was a great taste. It was a challenge to make the egg pockets but I can improve that technique! 😊 Delicioso.

Decided to plant paprika peppers this summer. Daughter tried growing chickpeas a few years ago. Very interesting plant. Leaves and pods unlike other beans we have grown. Very poor yield because we don't live in the right climate, but she did get enough for one meal. An interesting experiment.

I learned a shakshuka recipe that I modified with extra vegetables to add more substance to the sauce and chickpeas to add more protein. This recipe is almost exactly how I make my version of shakshuka. I like to make a large portion of shakshuka without the eggs and freeze them in single portions, so that after work, I just pull out a frozen block of shashuka, warm it up in a pot, and add eggs to it. So delicious and it freezes really well for a 10 minute weeknight dinner.

This looks like a nice change from my regular breakfast. I don't care for bell peppers and will probably use some mild green chiles instead. I made your poor man's bean stew last night and had the leftovers tonight. It was delicious, though it took forever (3 hours) for the beans to cook and they still were not quite as soft as I like.

I cook dried chickpeas from start to finish in 45 minutes. I like my chickpeas to have a bit more texture so cook them “al dente”. Not a fan of mushy beans. Happy Holidays 🎄

125 veg broth
simmer down

Mexican people love cilantro. In Perú we use it too, but we also decorate with parsley like the people from Spain.

You can usually find organic, GMO free in your local stores.
