I made this awhile back and followed this recipe and it is by far one of the best things I've ever made. I tried it first in a crockpot, no. Don't do it. It was soooo much better on the stove and cooking for the full 4 hours. It takes so long but is so worth it. Amazing! I'm going to be making it again this coming weekend and I can't wait.

you didnt clarify at which temp but im cooking it at medium heat! i also sized everything down bcuz i have small family and small pot🤣 and minus the bones. and winged it on the chiles my store didnt have everything:/

The consomé is the broth that the meat is braised in. Many times you will take out the meat to make tacos and serve a cup of the consomé to dip into. Chile oil is a great addition to both the meat or the consomé

The fat is typically left on so that during the cooking process it can render giving the sauce flavor and you use it to fry the tortillas. Since you can't stand the texture, I think if you trim it off and set it in a muslin or cheesecloth to cook along with the meat you can have the rendered fat but you can easily remove it so you don't get a mouthful of fat

Just divided like the meat was 9 lb so divide that by however many pounds you're going to do and divided the rest of the ingredients the same. Or you can actually make the pepper and the sauce like all that part the same you'll just have a whole lot of juice

I use apple cider vinegar instead and a bag of grass fed 16oz beef broth to speed up the process.

To get rid of the impurities soak them in cold water with salt for about two hours and you won’t have that issue .
