  • Professional baker Lani Halliday and home cook Daniel are swapping materials and hoping for the best! We set Daniel up with $97 worth of the finest cheesecake ingredients you could ask for along with chef Lani’s recipe. To lend a helping hand, food scientist Rose dialed to offer some of her trademark wisdom and encouragement. Over with Chef Lani, $17 worth of ingredients were being given new life and a few augmentations in a quest to improvise her way up to gourmet.     The gluten-free substitution was fine, because graham crackers are just graham crackers, but the cherry topping substitution was a step too far. the point of this is to use chef skills on easy ingredients to elevate them, not just sub out everything for better versions

      It would even be ok if they used the ingredients they were already given for a substitution but she’s just pulling things out from her pantry like the at home chef didn’t just take out graham crackers cuz he didn’t want to make the crust

    at some point, REPLACING ingredients with "pro substitutions" feels like cheating. Making a gluten free equivalent = ok. "i'm gonna make my own candied cherries RATHER than transform the ingredient given = cheating

    It always bums me out that the professional chefs don't actually use most of the ingredients from the home cook's box. I'd love the see them work with the actual ingredients- like channeling Rie's Make It Fancy!!!

      I was thinking the same thing! Although I felt like chef Lani actually stayed quite true to the recipe of Daniel, when we compare it to previous episodes. In previous episodes I felt like the professional chef would still make their own recipe by substituting (almost all) the homecook's ingredients with their own.

      I have the same feedback actually. The older videos were faithful to that premise but recent ones don't. They're adding ingredients that's not even pantry staple. It's making it more expensive.

      The ingredients may be in a professional chef's pantry, but most people I know don't buy gelatin and such without a reason. I agree the changing of ingredients is annoying.

      Most of them actually DO use all the ingredients. Lani's a rare exception since she is exclusively gluten-free (by necessity).

      Frank's basically using fancy and quality ingredients tho, so i dont get what you mean cause.... A michelin star restaurant chef uses the same fancy ingridients there's no more fancier ingridients. 😆
      A michelin star is an award given to the restaurant not the chef nor the ingridients, just incase you're confused.

      The gluten free flour is about $15-17 for a 5lb bag of measure for measure. Wheat flour is about $2-3 for a 5lb.

    Im getting a tad annoyed on how the chefs keep cheating... Is it that hard to work with whats given to you? You don't see the regulars pull out for example jam bc they dont wanna make marmelade!?

      They give little tips on how you can improve a recipe with mostly basic ingredients and I think that for the viewer that is interested in also replicating the recipe or just expanding their culinary senses it really comes in handy

      @@sycowent4666 Is it real vanilla or artificial vanilla. If it’s artificial, then yeah, you could get a 16 oz for $3 or $4. If it’s real then a 16 oz could cost about $21-$30. Now if you’re talking abroad abroad, like Peruvian or Moroccan vanilla….😬I think it’s worth it for the extra depth of flavor, though.

    The last video I watched, Frank only used the cheap ingredients provided and elevated them to make a lovely chicken pot pie. I thought that was more enjoyable and demonstrated his creativity and skill, and I learned from both chefs.

      well the last video I watched was supposed to be a pancake challenge and instead Chef Frank's recipe was a buckwheat galette with mustard and ham and a fried egg! they're supposed to make different versions of the same basic food item so we can compare and contrast. why stop there? why not make tortillas and do chilequiles. I think the producers need to hold the parameters stronger

    Does this chef use any of the $17 ingredients? I thought the point of these videos was to show first- you don't need to be a chef to make chef quality food, and second- even with basic ingredients, you can make fancy food. Instead I'm learning that if I don't have expensive ingredients, I need to get expensive ingredients.

      That’s exactly what drives me nuts about this series! They don’t just use the “simpler ingredients,” they include ingredients that are not typically found in a regular kitchen.

    I feel like this isn’t really fair anymore to be honest. It’s a challenge for a home cook to work with ingredients they don’t often work with, so the challenge for the chef should be to stick with only the ingredients given to them. Replacing almost everything is just cheating.

      Although I would REALLY like to see the price changes between the initial cost and level 3's end result... Lani has some pretty basic substitutions. The end results of the ingredients: gluten free flour, sugar, baking powder, baking soda, salt, cinnamon, egg, butter, molasses, honey, vanilla extract, milk, frozen cherries, gelatin, lemon juice, maraschino cherries. Nothing in here is at all out of the ordinary for a grocery store trip. Everything is either considered a staple item or something that can easily be re-used for another recipe. Saul is also good for this, just making store bought things from scratch instead of adding hard to find ingredients.

    I usually love these but she is SUCH a cheater!! They should have given her a gluten free substitute for the graham crackers that was still store bought! And she should have been FORCED to use the canned cherries! Come on! She took it from $17 to $30 easily with all her extra cheating.
    This is officially my least favorite one in the entire series!! The whole point is supposed to be to see how a chef uses the cheap ingredients to kick it up a notch. Not how they substitute everything with something else. 😒

      @@puggirl415 I agree with you. She also used ingredients that most people either have on hand or have a substitute for (ex: regular salt instead of kosher salt). Molasses and honey are easy and simple enough to get as well.
      The cherries and gelatin though were definitely too far. Most people don't have that stuff on hand. Doing homemade graham crackers still kept with the spirit of home cook cuz it was all stuff you can easily get or substitute. She even says you can substitute 1:1 gluten free flour and regular all-purpose flour.

    We've literally gone from this show having a pro chef coming up with a solution to handle common ingredients, to having a pro chef purposefully get ingredients she can't use so that she doesn't have to.
    I will keep complaining because I loved this show when i appeared genuine, but now you're not even trying to hide how manufactured it is. The pro chef is just gonna do whatever, regardless of whether the ingredients they got fit into their fantasy.

    I really appreciate so much, how happy and downright honest Daniel is all the time. He always looks like he is having the time of is life, when he's cooking/baking. Just makes it very enjoyable to watch.
    Btw, I have rarely seen a more joyful moment (for him and me, really lost it there xD), than when he came in dancing with his cheesecake, being so proud of himself. What a wholesome personality. :D

    I find it unfair for the pros to use ingredients outside of the preselected ones.. They could have replaced the crackers with store bought gluten free crackers.

    I think a lot of people are put off by Lani making quite a few alterations to Daniel's cheesecake, and I must admit I was at first too, but her final result looked so delicious! I like that she gave some relatively easy techniques to greatly improve the overall presentation, flavour, and texture that wouldn't overwhelm the average home cook. Sure, she could have just dumped the canned cherries on the cheesecake, but instead she gave us some tips on how to improve our own baking at home. Much appreciated!

      Also, overall the recipe stayed much the same! She didn’t make as many changes as some chefs do, and one of the changes she made was the crackers for the crust which she had to change for dietary restrictions. So the only big change she made was the cherries. Which was a garnish and not an integral part of the recipe. So if people wanted to they could still do the canned cherries easily instead of Lani’s version. 🤷‍♀️ she also only used ingredients that are SUPER easily accessible, therefore not out of the reach of people watching if they wanted to give it a try! 😊 those are the kinds of changes I am more okay with from the pro chefs.

    If someone has a food they avoid, like gluten-free or meat or alcohol or whatever, I think the recipe swap should consider that from the beginning. Half the fun of this is seeing how pro chefs get creative with what they're given. But if they have to avoid significant parts of what they're given and/or recreate key ingredients with stuff they're not given, it takes some of the magic away.

    Substituting store-bought crackers for homemade ones feels a bit like "cheating" xD. I mean, I get that she couldn't use the ones she got in the box if she's strictly gluten-free but it would've made more sense to replace them with store-bought gluten-free crackers instead. And just completely leaving out the topping ingredient from the box and bringing in all these new ingredients for the topping also felt like it wasn't really in the spirit of the series. Adding one or two minor ingredients (like a pinch of salt or sugar) here or there or using the box ingredients in an unconventional way, sure, but this felt like it went a little overboard.

      Because she’s gluten-free. What, she’s supposed to make a cheesecake she can’t even eat? She just made a gluten-free version of the cookies he provided then made it the exact same way she would have made it with the ones he sent. And the cherries? They’re a garnish, not an integral part of the recipe so you can easily use canned if that’s what you prefer. Some people like to learn how to improve their cooking in an easily accessible way. 🤷‍♀️

    My first video of this series was the mac and cheese one with Emily. The amazing high end chef only used her ingredients, and cooked them differently while making it look nicer than plain ol' mac and cheese. All of the other ones just have the high end chefs add whatever they want to use for their dishes. Bummer. Don't get me wrong, all of their dishes look great, but I wish they'd focus more on the challenge tbh

    they say "$97 cheesecake" and "$17 cheesecake" but they're counting the cost to buy the packages of ingredients not how much actually goes into the cheesecake, of course the recipe with a larger number of ingredients is going to cost more if you're calculating cost that way.
    they also aren't counting ALL OF THOSE SUBSTITUTIONS AND ADDITIONS that the chef makes, that would make their finished cheesecake cost more. but "$20 cheesecake vs $40 cheesecake" doesn't get as many clicks :/

      I respect your opinion but dont get your point tbh. I mean like, why wouldn’t a content creator want their content to sound impressive, it’s not like they’re actively lying about the numbers, and if the pro chef has less stuff but more fancy ingredients, then it would still be more glamorous then the home cook, so the argument of “how much goes into the cheesecake” is invalid. I’ll agree the substitutions and additions stuff is a bit misleading, but it’s not like it takes away from the video, albeit this video is a bad example due to the sheer amount of them. Besides, TH-cam is a tough place to make a good amount of money on especially when Epicurios usually doesn’t get nearly as many views as big league youtubers.
      TLDR: I think it’s fine for content creators to Glamorize their thumbnail as long as it’s accurate in some way in my opinion.

      she did say she is gluten-free. cant really make a cake with a crust you can't eat. I do give her some kudos for showing us how to make a gluten-free alternative, but yes I agree with you. I would have gone ahead and did it with the graham crackers anyway and ate everything but the crust.

      @@SimonMetin she is allowed to take it to the next level. that's the whole point of what pro chief vs home cook is about. A home cook trying to recreate a chief's recipe, and a pro chief taking a simple home cook recipe and taking it to the next level. Plus she IS gluten free which means she can't eat the store brought graham crackers because they use gluten in the og dough mix or anything gluten, period. you have to put that into account for any dietary requirements as well as what this part of the channel is all about.

      Its not just her that adds ingredients. All of the chefs do. I think its fine when they do it. It helps add a bit of flair to the recipes. its also pretty interesting to see what professional chef would do to a recipe

      @@OrlaCarey The original two with Frank, he didn't add a ton of expensive stuff. But that was pre-covid where they were on set and didn't have access to any spiffy things to add. I think the series was much more magical when they had to be creative with what they had rather than pull out $30 worth of extra stuff that the average panty may or may not even have.

    These don't feel like real swaps lately, the chefs makes many changes and use so many ingredients that were not in the box to begin with that now it's not a $17 dish anymore. They are both expensive

      I never thought about it like that before. I though the chef’s were showing the home cooks ways they could elevate their recipe with simple switches like the frozen cherries instead of the canned. I haven’t always watched this channel, so I don’t know. But what you’re saying makes complete sense

    Personal tip: If you can find it in a store where you live, try using quark (depending on where you live it might also be sold as "farmers cheese" or "baking cheese"). It's a german type of fresh cheese but compared to your standard fresh cheese it's a bit leaner and a bit more acidic. It works incredibly well for cheese cake because it has a rather unique taste and at the same time it doesn't feel like you are gonna gain 20 pounds from eating a single piece.

    I am confused- why was the pro chef allowed to not use the cherry pie filling? I could understand why she didn’t use the provided cookies for a crust but just to disregard the pie filling was a big mistake.
    I also thought that the home cook went out of his way to use all of the pro chef’s ingredients while she was allowed to make changes to his ingredients. The home chef should have the right to change the pro chefs recipe.

    The comments complaining about the chefs so called “cheating’’ is annoying. Be happy they gave you extra tips. You are watching to learn how to cook and to be entertained... ain’t none of y’all going out tonight and spending $100+ on your dinner, let alone a cheesecake.
    The price is a common use as an attention grabber for a title. Anyone could make it for more or less money. Keep up the great content and thanks for the tips/entertainment. Great episode guys!

    Do love that Daniel got a lvl up in his baking skills, and I agree that subbing too much changes the original recipe. I would have just tanghulu'd the cherries for a different texture. XD
    The Orange Marmalade cheese cake sounds amazing. XD unfortunately I am only so pro as to do scratch no bake cheesecakes with whipped cream and gelatin.

      He's probably super familiar with using cheap ingredients to the point where he's pidgeon holed himself and doesnt know how or have the confidence to work with more expensive ingredients.

    A good tip for the chef would be to use a torch quickly and lightly over the surface of the jelly before refrigeration. This will remove the bubbles and leave a smooth, glossy surface!

    I hate when the pro chefs add a thousand ingredients instead of JUST using the ingredients they are given. What's the point of swapping then?

    This is not ingredient swap between 2 chefs if she changes bunch of ingredients. The cookie base I get since she's gluten free but the cherry topping should have stayed. The point of this is for the pro to try and make the cheaper version of the cheesecake and make it good. By the time she adds all the substitutions it's probably at least double the intended value.
