I don’t mind if they add small changes that could easily be supplemented in a home chef’s kitchen. Adding oil, using eggs, etc etc is usually an easy enough addition to demonstrate how to elevate the dish when on a budget.
@Ella Winter That's a good sentiment but I think that really defeats the purpose of what is happening here. You're taking the ingredients that someone else would buy with that skill level and budget and doing the most with that scenario. Given the same budget, I am sure a professional chef would purchase differently than an amateur. It isn't just the budget, it is the knowledge and skills that are behind the reasoning of the individual's purchases and process. Who knows? The amateur chef could be able to make a better dish at a lower budget because they have more knowledge when it comes to low-budget cooking. Any addition or substitution on either side ruins the relationship being studied and what makes these videos so interesting

His interpretation of the flavours and the ideas he brought to the table really helped elevate the fairly traditional/basic ingredients he got, which to me is the whole point of this series.

To anyone who might want to use truffle in some recipe: do NOT add it before cooking. It's a strong flavor but it's extremely delicate and cooking it will make it vanish at best, and burn it at worst. Truffles are almost exclusively shaved on top of the finished dish, any other use you *really* have to know what you're doing, otherwise you'll be wasting a very expensive product!
It was refreshing to see a swap without any additions or ommitions. It is frustrating to me when the pro swaps so many things out of the home cooks' recipe that it is unrecognizable. This is my favorite swap so far. Also the best pair. They are both so chill.

I love how Gabbi incorporates her plant based diet into these episodes and the other ones she is on. She still makes the meaty foods that are sent her way, but she almost always sends over plant based recipes or has one and I just love seeing the representation . Plant based is delicious too!
