  • Professional baker Lani Halliday and home cook Emily are swapping materials and hoping for the best! We set our resident ketchup queen Emily up with $118 worth of the finest ingredients you could ask for in a brownie, along with chef Lani’s recipe. To offer some on-the-go expertise, food scientist Rose dialed in for a tutorial teleconference and pep talk. Over in Lani’s kitchen, $14 worth of ingredients were being stretched to their limit in a quest to improvise her way up to gourmet.     I feel that there should be a rule that the pro chef isn't allowed to add or remove ingredients from the other's recipe.

      I would disagree slightly. Alot of the pro chefs they use would change something slightly or replace one thing and add another but yea all those was the like the original ingredients with a little bit of a chef's touch.

      I mean ultimately the point of the pro section is to highlight how they can elevate the basic recipe with just a few changes-it wouldn't actually be that interesting to watch a pro chef cook a mediocre recipe.

    If anyone cares the difference between light and dark brown sugar is the molasses in it. Dark brown has more molasses than light brown sugar. If y’all wanna take your cookies/brownies to the next level. I highly recommend making your own. You can even use dark brown sugar from the store and add more molasses to it and mix.

      Came to see if anyone else had the same thought. I get subbing the AP flour for gluten free, maybe she’s allergic but I truly believe she added too many things. How can they say it’s $14 when she added different things/subbed higher quality...

      I think it's fine to add ingredients outside the brief, but they would have to be common household ingredients that most people likely already have, nothing fancy.

      The potatoes and flour were kinda a problem. Using a vanilla bean when your box comes with vanilla extract seems like cheating, especially when a vanilla bean is around $7 on it’s own.

      I think what might be a cool idea if they can't stick to the brief is to give the pro chef the home cook's budget and vice versa. Then they go to the store and buy whichever ingredients they want but using up their budget money.

    Rose is one of the most emotive persons in the show. Her face expresses so much and so sincere. There was an episode where she got called about very expensive meat and during the call you really saw in her eyes how much she loved teaching about this meat. Really genuine love.
    And in this episode: Just look at her face when Emily reads her the title. What a beautiful person. :)

    The real star of the show is absolutely Emily's adorable dog kettle. I want to be its friend and give it scritches.
    Also, I have to say that Lani's take on the normal-price brownies looked excellent (and I will forever be using cocoa instead of flour to nonstick my chocolate cake tins) but I always feel like when the pro chefs add extra ingredients (allergy substitutions notwithstanding, ie. gf flour instead of ap) it's not quite in the spirit of the challenge. Like, it's not a $14 pan of brownies anymore if you've put a $9 vanilla pod into the cream, now is it, professional chefs?

      Yeah, it doesn't bother me if they add a cheap ingredient. Like, adding an egg or adding the potatoes in this one because it doesn't change price that much. But a vanilla pod is not a cheap ingredient or even something people would normally have in their house.

      I agree but at the same time you can get vanilla beans for less. Kroger often has them on sale for around $3 a bean (two in a spice jar), which I don't think is too outrageous for an already $14 brownie. If you buy them in bulk, you can do even better.

    The pricing in this series is infuriating. The “amateur” prices are all over the place and most of the time listed based on quantity used while the “pro” is listed based on entire contents of containers

      Right, yeah in this one it says 1 dollar for the butter, plus 2 dollars for the vanilla extract. I wish groceries were that cheap! 🤣 plus that spectrum brand canola oil is probably 7 bucks alone! 🤣

      Right? I thought she was super competent! And like... It's not insufferable snobbishness to value high quality ingredients. Does anyone get mad that a carpenter making custom cabinets might wrinkle his nose at the tools included in ikea kits? Not to mention, lani was insightful about teaching some good techniques to jazz it up and to improve the whole experience of eating. I thought she was great!

    The culinary school I went to would never, and mean NEVER, allow a chef to have long nails, hair down, and rings on almost all fingers! And I won't even mention the attitude (my eyes rolled to the back of my head through out the whole video). I love Emily! She is adorable! and her puppy kettle...OMG!! It beats Le Creuset any day!     What an incredibly charming episode. It’s so nice because trying difficult recipes is one way to just help you really improve. So it’s nice to see a novice actively learn, even if she won’t be making this all the time.
    On the other side it’s nice to see a seasoned chef use ingredients that are much simpler and helps me to learn to become better and not break the bank. There were ideas I would have never thought of.
    Funny, charming, adventurous and educational what a well done episode.

      Idk man some of the best brownies I have ever had got some nuts in them but I agree that they dont need them. Always when I make my own I dont add nuts.
