I've tweaked it to our taste as we are big spice fans here to I roast 4 jalapenos and do a whole pound of bacon and we make this thing a meal for the whole crew. I made this recipe last night and it was a huge hit. 5 adults finished the whole dish. I substituted soy milk for cow milk, and added sauted shrimp. The green chilis were the key. Could almost use two 4 oz cans. Thanks for the great ideas.
This was so popular with 2 of my adult kids, that I made it again last night for the remainder of my kids/their spouses/grand kids. This time I used two 4 oz cans of diced green chilis and added 1 lb of shrimp cut into small bites size. Even the grand kids under 2 years old ate it up. We farm organically and have peppers ripening soon. They will be great in this.

Flavor must be reminiscent of a jalapeño popper, and boy do I like those, especially after being smoked on an offset smoker with pecan wood. Whenever I run the smoker, you know I'm putting on some poppers.

Mr Kent - Milton from Southern North Carolina. One of my friends (from far north west) from a long while ago would adjust his lids to a tight fight (for a good lid to pot fit) by putting a grit or rubbing compound on the rim of the pot, placing the lid on and rotating or spinning. Repeating until the pot lid and pot was mated. Mr. George I haven’t seen in half a life time. My first Dutch Oven Peach Cobbler was his. Great memories Mr Kent, thanks.
Can't wait to try this favorite, haven't used bacon, I usually use chopped ham, peaz with some white cheese. Love the toppin', I use corn flakes, also on my tuna casserole (thx mom)...it does get soggy from the refer, but easily replaced.

I gotta try this method. I generally just make boxed mac& cheese but add a can of Tuna( drained) then mix in a generous amount of Lemon Pepper. This looks a whole lot gooder. Hey Kent thanks for sharing...I have been making my mac and cheese this way for about 30 years and its so yummy for sure. One other thing that I do is I also take come croutons and add that to a skillet with butter. layer that on top with a dusting of paprika and cook on the the top with you coals or in your home oven.. I added a half block of cream cheese, and 1/4 cup of Widowmaker IPA (a double India pale ale from Fall River Brewing Company in Nor Cal). Ot is AMAZING!!!! I've done bacon infused mac-and-cheese topped with panko and finely grated parmesan. I bet the addition of green chilis would be oh-so even better than what I've created. One tip - I *NEVER* use pre-shredded cheddar. While convenient, the pre-shredded stuff is coated with cellulose as an anti-caking agent, and can have a gritty mouth-feel when melted. Second tip - before shredding from the block of cheddar, pop that bad-boy in the freezer for about 20 or 30 minutes .. I find it tends to stick less to the box grater. Happy trail and happy cooking !!!

I have made this Mac & cheese twice so far & am fixin to say that this is absolutely the best Mac & cheese I’ve ever made & eaten. The second time I made this, I had received Red River Ranch seasoning in the mail & used it in the Mac & cheese, which made it even better than the first time I made it. Thank you for your videos, & I’m fixin to make more of your tasty recipes in the future that are bursting with flavor. So far I’ve made this, the cowboy chili, & cowboy sloppy Joes in my Lodge 5.5 quart enamel-coated cast iron Dutch oven. Mmmmm delicious!!

I have to dis-agree with that true-love, I love watching Kent and Shannon's cooking shows and can relate with a lot of his and her beliefs,, being GOD FAMILY GUN's, in that order, but feeding a dog from fork that I'm eating from I draw the line. Kent being the God loving, God fearing man he is should know that God give us humans dominion over the animals. I'm not a animal hater at all, got few myself but they have there place and they and God is depending on us to take care of them.

That bacteria in their mouths is there for a reason. Like I said I love animals, but they have their place below humans. To top it off I see these videos of people letting the dog lick newborns in the face and mouth area thinking oh so cute,to me that is child abuse and they won't be laughing thinking it's so cute when the kid get's a flesh eating disease that soap and water won't wash off.

Dear Shan & Kent, we fixed this for supper tonight - lip smackin' , denture clackin' cheesy ecstasy. We couldn't find Hatch green chilies in England, but just a smidgin of Frank's hot sauce gave it some warmth. The great dane joined in with quality control and our little Cornish happy dance. Kent, I was so sorry to hear about your loss. I have lost many pets and know the hurt it causes. I have gotten into cast iron after my grandfather got me into it. He was a cook in the airforce through vietnam. I bought your book taste of a cowboy and watch all your videos. Keep it up because we love your cooking, love of family and your love of tradition. My grandfather is still around and I would appreciate if you could mention him in a response. His name is Wendell and he has taught me a lot on how to fix things myself and to serve my country. He handed over to me a collection of Griswold and Wagner skillets which started my collection. I became a police officer and i owe a lot to him. He raised me to be a man that served others while still holding on to our country roots.
My husband and I watch you guys cook every night. We watch at least three shows before we cut it off. I have been searching for a good mac & cheese recipe. I found it right here, I did! I have made this Mac & cheese twice so far & am fixin to say that this is absolutely the best Mac & cheese I’ve ever made & eaten. The second time I made this, I had received Red River Ranch seasoning in the mail & used it in the Mac & cheese, which made it even better than the first time I made it. Thank you for your videos, & I’m fixin to make more of your tasty recipes in the future that are bursting with flavor. So far I’ve made this, the cowboy chili, & cowboy sloppy Joes in my Lodge 5.5 quart enamel-coated cast iron Dutch oven. Mmmmm delicious!!

Hello from Down Under. Done this recipe twice this week once for lunch and then for dinner tonight. Only thing no green chillies as.my kids don't eat it or the Ritz biscuits. Whole family ad my quality control inspector loves it as well.

I have to dis-agree with that true-love, I love watching Kent and Shannon's cooking shows and can relate with a lot of his and her beliefs,, being GOD FAMILY GUN's, in that order, but feeding a dog from fork that I'm eating from I draw the line. Kent being the God loving, God fearing man he is should know that God give us humans dominion over the animals. I'm not a animal hater at all, got few myself but they have there place and they and God is depending on us to take care of them.

@@Meezy70 Ha,ha how do you figure that? Missy do a little research on the matter and you'll see that God created animals such as dogs to eat crap that could kill a human. That bacteria in their mouths is there for a reason. Like I said I love animals, but they have their place below humans. To top it off I see these videos of people letting the dog lick newborns in the face and mouth area thinking oh so cute,to me that is child abuse and they won't be laughing thinking it's so cute when the kid get's a flesh eating disease that soap and water won't wash off.

Dear Shan & Kent, we fixed this for supper tonight - lip smackin' , denture clackin' cheesy ecstasy. We couldn't find Hatch green chilies in England, but just a smidgin of Frank's hot sauce gave it some warmth. The great dane joined in with quality control and our little Cornish happy dance. I was so sorry to hear about your loss. I have lost many pets and know the hurt it causes. I have gotten into cast iron after my grandfather got me into it. He was a cook in the airforce through vietnam. I bought your book taste of a cowboy and watch all your videos. Keep it up because we love your cooking, love of family and your love of tradition. My grandfather is still around and I would appreciate if you could mention him in a response. His name is Wendell and he has taught me a lot on how to fix things myself and to serve my country. He handed over to me a collection of Griswold and Wagner skillets which started my collection. I became a police officer and i owe a lot to him. He raised me to be a man that served others while still holding on to our country roots.
