My nanaw Crocker always kept a tin of pork lard/bacon drippins next to her stove. She never had leftovers cause we ate it all! She fried chicken in a huge cast iron deep skillet. Everything was made from scratch including loaf breads & pies. To make flour tortillas she smashed the balls of dough out. No rollin' pin needed. They had a coal furnace in the basement and oil lamps. I have a photo of her & gramps taken before they headed west to Springfield, MO in their Ford model T. They were the salt of the earth. Survived the great depression & 2 world wars. I miss the America I once knew.

Yeah, I have a friend that it's a owner of a tortilleria in el paso, I guess you was station in Fort bliss, it has grown up a lot, I lived in el paso for about 18 yrs, then I moved to Oklahoma, but yes, they still make flour tortillas.

I'm a 33 year old guy who is doing alright in life but I really do miss my father and grandfather. Love the smell of fresh flour tortillas. As a kid, running home for dinner through the alleys in my neighborhood, you can smell the flour tortillas coming out of all the homes as they were being made every evening. Good stuff.
There is a product out on the market called " BACON UP", which is pure filtered bacon grease , I use it a lot. It has great flavor, It can be found on the shelf with all the other cooking oils. You guys are always such a joy ☺️... I love your recipes! This has got to be the best kept secret for homemade flour tortillas! Muchas gracias señor 👍🏾💯

I don't use baking powder in my homemade tortillas because my mom never did and I learned from her. I use the brown Manteca from my local Mexican market and reserve the bacon grease when I refry my homemade pinto beans. I love to sprinkle cheese on top, cover it, and let it melt. I loved your video and that (Bertha) stove!!!

As a New Mexican who grew up less than an hour from El Paso, Texas, I can truly say I APPRECIATE everything about this video 👍👍 The way you pronounce tortillas and quesadillas correctly, using Hatch chiles in your salsa, to your little dance you busted out in- ALL top notch, good sir!! 👍👍 Those quesadillas looked delicious. The wood lathe is the best Christmas present I ever bought myself. Mostly I made bowls, but any excuse to use the lathe, which includes rolling pins. So, I am at a show, and a woman from Mexico came up to me and asked if I could make a "Palote" for her. Turns out this is a traditional smaller rolling pin that dads would make for their daughters before getting married. Generally they are smaller, like 9 to 12 inches. Some like straight cylinders, some like tapered to both ends like what is called a "French" or pastry rolling pin style. I still make some, and as I said earlier, any excuse to play on my wood lathes...

A few comments and compliments: 1) I love the sepia filter that you are using Shan! Gives a cool Old West look to it. 2) I think you were looking for Chili Powder or Paprika, Kent. Though I use a blend of Mexican Oregano (not Italian), Smoked Paprika, Chipotle Chili powder, Cumin, salt and pepper. (fresh garlic and onion so I forgo Onion powder and garlic powder) 3) if you REALLY want a treat, fine dice some hatch green chilies into the tortilla dough. (Though the box shredder you used would work great and I am stealing that idea!) 4) Lastly, if you REALLY want a round shape, use the outside ring of a springform pan like a large cookie cutter. Thank you for all the wonderful things You, Shan, and the Taste Testers do!

I never thought of using bacon grease in tortillas. I know they have to taste sooo good. I'm gonna try them. One great thing about quesadillas is you can put anything in them. I grew up in South Texas. I have a criteria that a good Mex/Tex-Mex restaurant must meet before I sit down. 1) If they have tablecloths, walk out, 2) If the furniture all matches, walk out, 3) If any item on the menu says "Contains no lard", walk out. 😁
You've inspired me to try to make some homemade tortillas. We have a local store that makes them homemade too and you can watch them make them with their automated contraptions but they are so good compared to any other tortillas on the shelf. Thanks for the video!

I can endorse this recipe immediately because I have been putting bacon grease in my tortillas for years. It adds a perfect subtle smokey flavour to flour and corn tortillas which regular lard does not have. The pinch of baking powder does help also in creating a fluffy tortilla. Hey kent so recently my mom is working up in Sarasota Florida and we live in lake Mary Florida and she has a friend up there in Sarasota that owns a ranch that's a medium to large ranch it's not too big but she mostly has horses cows and chickens for now and she's planning on getting more animals and I heard from my mom that she needs a New ranch hand So do you have any advice because if I do go I want to get a heads up or a head start if you will

I was in the Army in El Paso Texas. Every store made fresh tortillas, $1 for a dozen, fresh and warm. Delicious! It was a long time ago.

I use bacon grease to cut into my flour instead of crisco when I make my dumplings for chicken and dumplings too. Also makes them WAY better.

Flour tortillas from scratch was the only way back then. Bacon lard is a special ingredient, that ground beef filling was awesome too ! 🤠🤩🥰💯🇺🇸

I grew up in South Texas. I have a criteria that a good Mex/Tex-Mex restaurant must meet before I sit down. 1) If they have tablecloths, walk out, 2) If the furniture all matches, walk out, 3) If any item on the menu says "Contains no lard", walk out. 😁

You've inspired me to try to make some homemade tortillas. We have a local store that makes them homemade too and you can watch them make them with their automated contraptions but they are so good compared to any other tortillas on the shelf. Thanks for the video!

I can endorse this recipe immediately because I have been putting bacon grease in my tortillas for years. It adds a perfect subtle smokey flavour to flour and corn tortillas which regular lard does not have. The pinch of baking powder does help also in creating a fluffy tortilla. Hey kent so recently my mom is working up in Sarasota Florida and we live in lake Mary Florida and she has a friend up there in Sarasota that owns a ranch that's a medium to large ranch it's not too big but she mostly has horses cows and chickens for now and she's planning on getting more animals and I heard from my mom that she needs a New ranch hand
So do you have any advice because if I do go I want to get a heads up or a head start if you will
They are long days at times and short nights for sure, but it sure worth all the time you put in.
