    Kim and CG, kids this is a nice video. As a young boy I spent countless hours shelling pine nuts for the family receipt and now you can buy pine nuts unshelled at the store. I don't say pesto, but I call it Basilico, it's a family tradition.

    I’ve been looking forward to this video 😊. I’m waiting for my basil to get going here in Oz and I’ll be making heaps of pesto. When my daughter was in primary school they had a no nut policy due to kids with allergies, so we used sunflower seeds (inexpensive as well) and I always add some lemon juice to keep the vibrant green colour. Thanks for another beautiful video Kim

    I planted basil last summer and silly me I let it flowering and forgot to harvest before it dried up. It's spring now in my country, it grows all over my space, now I have to deal with it. I am transplanting into pots and giving away to friends and neighbors, it's alot of job I'm telling you. Thanks for showing how to make pesto, it looks good.

    You are SO RIGHT about the ease efficiency and effectiveness of making pesto (and so much more) with a food processor rather than a high speed blender. As far as I'm concerned the only thing those blenders might be able to do better than a good food processor is make frozen cocktails or smoothies.
    I'm in in SC zone 8a and did my big (almost final) Basil harvest a few weeks ago in early October and made batches of pesto I froze without cheese (as they say if you are freezing the Basil, it is better to add the cheese just before you use it after you have defrosted the basic Pesto without the dairy). Although last night , just before a 3 weeks premature freeze warning, I went out and harvested the last bits of leaves. There were also a ton of green tomatoes that were still growing i had to harvest and now am wondering how I can best use.
    I was pretty good about dead heading the Basil flower at the top of each plant during the spring and summer and early fall before they bolted too much which extended the amount of time I had bountiful fresh Basil. I wish there was a way to do the same thing with Cilantro.

I spend most of my time rebuilding the town and chopping down dead burnt trees, I was kinda semi retired for awhile but I have 30 years experience in such things so after the fire swinging the hammer alot

    I really love pesto but I hate making it. After watching your video I see it’s easier to dry the leaves before taking them off the stem, (after washing). I always make pesto with almonds because I usually have them for snacking! A trick I saw for removing excess air in freezer bags is to submerge the bag in a bowl of water and then seal.😊

    • @CaliKim29
      @CaliKim29  ปีที่แล้ว

    1) your basil looks glorious, congrats!
    2) your pesto doesn't look as glorious: it's extremely thick, it definetely needs more olive oil, less cheese and pepper is useless.
    3) I wouldn't freeze it, you'll loose some taste, make less pesto and put it into the fridge: it will last few days... but fine if you want to freeze it.
    4) no lemon juice please: wash your leaves carefully, put them into the mixer under a layer of olive oil, mix it carefully: a thin layer of olive oil must stay on top, this should avoid oxidation.
