- On our farm we try to avoid the supermarket as much as we can so we are always looking for ways to preserve our harvests and enjoy them all year around. Basil is quite a difficult herb that does not store extremely well. These are out 6 preferred ways to preserve this wonderful and fragrant herb. We use our pantry, freezer and fridge for these methods. Be sure to watch this video in case you want to enjoy basil all year long.

We grow basil on our windowsill year round. And we plan to start parsley there as well. Our kitchen window faces south. In the winter it is very, very bright. And we pronounce it bay-syl. And Italians call many, many different recipes pesto. The word pesto is from the action of crushing something in a mortar with a pestle (pestle=pesto). So anything made that way is a pesto. So yes, you can call it pesto.

I enjoyed learning about the preservation methods with basil especially the nut butters. The infused oil is a beautiful addition that I can use when basil is out of season and I want a Caprese salad.
Thank you! Fantastic video! I do have to agree, the music was loud and a bit distracting but everything else about this video was really good. What kind of cheese were you putting around your gnocchi? My mother came from the Isle of Capri and she was a wonderful cook.
Thank you very much fro this lovely comment! The sheeps' cheese we used here is a local fresh cheese, but in the absence of a good salty sheep's cheese, you could use feta :) Ohh yes, the Italians know their stuff!

Just found your channel. Love the video. Last year, I had grown tons of different types of basil. Dried it all. Looking for trying your other techniques. I do, however, have some hearing issues & the music made it very hard to focus on what you were saying. Thanks for the video.
I love all the ideas for storing basil! I’m just wondering how you use the basil stored in salt. Does to become a finishing salt that is basil flovored?
@DeeGee19 you can use both the flavour as well as the 🍃:).I use them on things like pizza, breads and even in salads. The salt wenuse for rubs, in soups, vinegraitte and straight onto salads. Hope that helps

Thank you for your lovely comment! Rhe salt gets a basil infused scent which makes it great to use in vinegraitte or other topping of dishes (salad, meat). We use the leaves on top of pizza usually. The salt can be used in dressings and in mayonnaise. It can also be used to sprinkle on top of a salad. Thank you for your question!
Love these ideas!! Thank you for the video!! I made the basil oil-mine is dark green, my basil was starting to brown before I blanched it. Do I just need to move faster? It’s still tasty, just not very pretty 😬
It's great to hear you tried the basil oil! The basil leaves should be green before blanching to get the optimal result. Make sure they don't brown during blanching (then you are blanching them too long) and that you cool them immiditaly after in an ice bath. Then padd them dry really well. If you use very green dark olive oil, this can also skew the colour towards a darker green. Another tip is to let it extract by gravity, without force, this prevents any leftover water drop (if not removed property after cooling) to mix into the oil. If this does happen, place the oil in de fridge and scoop off the oil, which will separate
in a hard block from the basil water. Let me know how it goes!
I make pesto using garlic , olive oil and pine nuts. I freeze it in silicon trays and keep it in my freezer. I add the cheese after I soften the pesto and add it to pasta.
Yes! That is a great technique. That way you get to enjoy the classic pesto. I never did this, but will definitely start doing that now as well.

@dorothyczygmunt5232 Thank you!!! We do not use oxygen absorbers, but we also don't store huge amounts of herbs, so we tend to use them within the year. :) I have been stroing dried herbs for so long, and only recently have seen others use oxygen absorbers. Have not looked into them yet. Do you use them? As for the basil, I take of the hard stems, I do not pick the leaves of 1 by one..
@@thefarmingchefs I have used oxygen absorbers occasionally but not sure they do much. I have dried herbs for teas and such and used a vacuum sealer to remove the air from the Mason jars. Hey I don't mean to be rude, I just wanted to let you know that there is a problem with your audio setup. Your voice is only coming in through the right channel, therefore only through the right ear cup on my headset. I've confirmed that my setup is working correctly, so it must be something in the recording. You might have to make sure that your mic track is set to mono instead of stereo. I hope you look into it so I can watch some of your videos, thanks!

My basil patch grew so well it’s been hard to keep up with lately.
I’ve kept it from going to flower, but is there a time when you prefer not to harvest from it anymore?
when there are too many flowers. When they just start coming up, it is still OK. But the bush will quickly start loosing leaves and gaining more and more flower. By that time, it is not so fragrant any more.

Do you wash the basil before putting into a freezer bag and into the freezer?
You can, but ways make sure the leaves are completely dry before freezing.
I made pesto with walnuts instead of pine nuts and lots if lemon and parm...froze it.

How long should we let it drip to obtain the oil?
The longer the better, slow extraction is best, I usually let it stand for at least a few hours.

Helpful information, I have a lot of basil Music was distracting and loud and you spoke a little too fast for me Acoustics are not good in a kitchen.

It is notorious that dry basil tastes like hay. You want to preserve and dry only the basil flowers that they really taste like fresh basil.
The hay flavour usually comes when the fragrance compounds are lost due to exposure to sun or excessive heat (over 35 celsius). slow drying at room temp is best. But I would agree that dried basil is not the favourite of dried herbs, as it does not come close to it's fresh counterpart...

i work at a monastery and they had a large donation of basil... it happens... I like the channel; and have subd and will pay attention and review past videos we come across large quantities of "donated" stuff from donors and I like to focus on preserving whatever we get... ty and keep up the great work@@thefarmingchefs

It is true! The prices are going through the roof! We have oil from the farm, but the lagar (mill) we use also sells oil. Usually for a much more reasonable price then the supermarket. I think it was 5euro/liter last year. Am curious to see what they are charging this year.

Have only just discovered your channel today and I am already very impressed by the information shared with your viewers both in the sense of the actual content of the video as well as your manner of presentation. By the way, would it be possible to preserve basil leaves by freezing them in water? Which, obviously will solidify into ice, once in the freezer, with the fresh leaves of basil trapped inside the ice.

Thank you! :) maximum 6 months I would say, I prefer this method least though, due to the fact that they never quite has the same fresh aroma as fresh leaves. I would make oil, if that was what I was going for :)
On the last one with basil and almonds, did you add olive oil as well?
yes! You can add it according to your own liking, more liquid or more firm. Don't forget to add some salt. :)

If there's a better way of "getting rid" of anything than turning it into pesto, I don't know what it is.
