Happy birthday!! So nice to see spanakopita here as we call it in Greece!! My grandma's tip is to add a bit of rice or couscous or something like that to your filling ( just a handful, depending on how much you're making, no extra water and no need to fully cook it, it will cook in the oven), to absorb the extra moisture - so instead of the chickpea slurry I'm guessing - though this and tofu add protein to the mix, such a good idea. She always adds leaks and onion to the filling, it gives it sweetness. And of course you can do this with other herbs/veggies too.🤤🤤

I love pick up limes and her recipes are wonderful,. I hope she does an actual cookbook. All her recipes are healthy. For cooking rice dishes I highly recommend buying Yum Asia cooks rice to perfection and it can be used to steam food as well and cooking stews.

Borek can have many filling variations- spinach, potato and leak, mushrooms and red onions, minced meat with onions and peas. The constant ingredient -except in the mince version- I’d the feta cheese. If you like it crispy just brush with butter, but you can also pour a mixture or yogurt, egg, olive oil and salt on top. Obviously use vegan substitutes of all the animal based ingredients I mention above and simply skip the egg if you are pouring sauce over it. Instead of rolling the filling, you can crinkle filo sprinkle filling on top then put another layer of crinkled filo and filling and do several layers like that in a baking dish brushed with olive oil. Happy Birthday PUL team! I am not vegan but have watched every single Sadia video, discovered tofu -now a family favourite- and have impressed all my vegan friends and guests over the years. Bosnian here! We have spinach-cheese version but the potato version is the original vegan flavor. We also have cabbage, pumpkin etc

I've been watching very nearly the whole time and I still go back to the older videos and rewatch them. ❤
