Diamonds To You is obtainable in single-player by tossing diamonds to any mob that can pick up dropped items. Ie; Villager, Zombie, Skeleton. This works on every version with achievements available.

The way I got the on a rail achievement, was I was exploring old versions of Minecraft Xbox 360, and I went to TU12, and I just got it from loading up the game on my Xbox! I should probably go and ACTUALLY get that now. And I have gotten most of them, just Great View from up Here, Beaconator, and Mine!. Also you can get the Sleep with the Fishes one buy using soul sand bubbles, to push you into a glass pain. And stay like that for a day.
