Whatever the type of rice you're using whether parboiled, long grain, Basmati etc, you would use the recommended liquid to rice ratio. If the rice requires 2:1 then you could do 1 cup milk, 1 cup water to 1 cup rice. The coconut milk is just for flavour so use as much as you want within the recommended LIQUID amt.
I want to make this for NEW YEARS DAY. I want to know can i use reg thyme instead of fresh. Also what is the difference in flavor if u use water and opposed to coconut milk. Its a question ive never known the answer too. Also how different wud it taste if u use bay leaf vs thyme leaf?
You may explore flavours ;however, if you want to make Jamaican Rice and Peas, I suggest sticking to fresh thyme. I sometimes add bay leaf as well but I never leave out the fresh thyme. You can cook with just water but it's definitely tastier with even a small amount of coconut milk

OK I am here to give my review. I used your method and it cooked up perfectly, however though I was skeptical about the basmati rice I tried it anyway. Well for me the basmati rice was a huge NO. The basmati rice has it's own intense flavor and it just overpowered the coconut flavor. I did not enjoy the combination. I will try it again using my regular long grain rice.
👏🏾 Good thing the dish isnt called Basmati Rice and Peas which means everyone will use whatever rice they like. It's pretty simple...YOUR KITCHEN, YOUR RULES. Use whatever rice YOU enjoy. I LOVE rice and peas with any rice except Parboiled and brown rice.

We use both water and coconut milk never just coconut milk
