While you were right about #23, when I was doing Tick Tock Clock (but mainly Rainbow Ride) I used Wing Mario Over the Rainbow to purposely die and get closer to the Vanish Cap stage, which has 3 1-ups at the start, which really helped.
This really got me thinking about the general design of the red coin stars. For example, a lot of the concentrated area red coins are in stages that are either massive(Hazy Maze Cave and Rainbow Ride), or surprisingly difficult(Lethal Lava Land). I also noticed that Big Boo's Haunt's coin placements can be justified by the "storytelling" of the star order. Essentially, there are no coins in the attic because the attic isn't supposed to be explored yet. Maybe you could do a video analyzing that.
You know, if you include the 15 100-coin stars, and the 3 puzzle stars that involve you collecting coins, you get more than 1/3 of the stars by collecting coins alone. (41 to be exact) So you can tell how important collecting coins is in Super Mario 64.

Also what sucks about Dire Dire Docks is that you also need most of the red coins to do the 100 coin star so it's best to do both in one session. No other stage really requires that.

Honestly, I get the red coins in the sky death can be annoying. I like the cleverness behind it and it makes sense. Also, it's a lot of fun to fly from clouds to cloud.

Definitely agree with you on the rotating platforms being a nuisance in the Vanish Cap Level. I died at least fifteen times on those things due to the depth perception.
Dire Dire Docks allowed me to try a really fun red coin challenge which is possible but requires some good technical movement - no poles. It requires you to make some precise triple jump dives and wall jumps off the red cages off of the ship to reach some of the reds. However, because of the water, there is no need to worry about dying, giving you as much time and attempts as you need until you get them right. It is also possible to reach the blue coins without the poles, but it requires you to do a very precise 45° wall kick after a very precise long jump just to barely grab the ledge, which I wasn't able to do.
Last place for me is Dire, Dire Docks because of how tedious it is. My favourite ironically is Wing Mario Over The Rainbow as there's just something really enjoyable about doing that one I feel since it's basically about stratigising and thinking ahead. Excellent challenge and excellent level all round!
I agree Bob-omb battlefield has the best red coin stage the exploration reminds me of banjo kazooie because you have to visit every section of the stage to get the star and the camera works great with the level it is defiantly a great level that is a part of a great game

Bro I actually think I’m the only person in the world who loves wing Mario over the rainbow. I didn’t think it was hard and it was just a fun relaxing beautiful trip around the clouds. In my opinion one of the best stars in the game
Coins Amassed in A Maze is decent in my opinion. I never liked Rainbow Ride since it’s pretty boring but the Red Coin star is the only star from Rainbow Ride that is fun in my opinion.
I think the reason why some of the coins are all in one area is to differentiate those red-coin stars from the 100-coin stars, which already make you travel all over the world to gather coins.
In my recent playthrough I actually enjoyed wing Mario ver the rainbow and did die once. Tall tall mountain 100 coin and dire dire docks 100 coin are the bane of my existence.
I wish red coins were in Mario Maker 2. Ring 2x6 Variants: Red Gold Red Ring is a collectible. When collected, eight red coins will appear. Those eight red coins are placeable and can have a parachute or wings placed. Each red coin is worth two regular coins. Limited placability though. Default power up is a Fire Flower, but it can be changed. If the player already has a power up, then a 1up is given. Bonus: Blue P-Coins Can’t place any add-ons. Up to 100 can be placed. Only active when a P-Switch is active. Each blue coin is worth five regular coins. Also Dry Bones for Smash!
Tox-Boxes are those things with the faces painted on them in Shifting Sand Land. I think what you were talking about are called Crazy Boxes or something like that.
I never found Wing Mario over the Rainbow that bad. Having to climb back up to the top of the castle isnt an issue if you never fall in the first place.
What would be awesome is instead of Yoshi being on the roof, give him his own area via pipe on the roof when you get all 120 stars. Where am I going with this? Once you open the 50-Star Door the cannon allows you to blast to the top of the castle, where a hole drops you right in front of the clock. This helps hub-world traversability and fixes the annoying non-death in the cloud world.
Maybe I'm a weirdo but I always loved the Secret Aquarium. I always found it oddly beautiful and the concept of this block of water that is for some reason somewhere in the sky is strange in a good way. That being said, the red coins are a tad too easy to collect.
I wish the castle had a red coin star.
