Someone probably already mentioned but the reason it was wavy after the ribbing is because you increased by putting more blue stitches than green ribbing rows! Also I would HIGHLY suggest using a single or half double crochet stitch for the ribbing! It will allow more stretch and go by sooo much faster
Also is you sew it together on the inside you can’t see the slip/single crochet stitches. Then for the sleeves when you are working in the round instead of doing the stitch from the inside of the circle out work around the circle. That way you see the nice front of the stitches when you wear it!
If you measure your gauge, then you will know how many stitches it takes to equal the height of a certain number of rows. For example, if you measure a 4x4" patch and are getting 18 stitches wide to 20 rows high then you will know to edge with 18 stitches per 20 rows OR, IOW, skip every 9th row.

a little tip.. when you do the ribbing you can do a row of single crochets after finishing it „on top“ like on the side you want your blue yarn to go later.. then it‘s easier to find places to go in with the blue yarn later and it looks a bit more even? Turned out fantastic! I am inspired to do this too. I made crochet socks with no pattern - they get better each one I make. You can use a smaller crochet hook to work the ends in instead of a needle.
One thing you could do is to thread needles with different colors and stitch patterns into the surface of the sweater. I am a huge textile fan and even tho I don't knit sweaters I do a lot of other work with fabric so I love working a surface with different textures. You could even sew patches of cotton fabric onto the surface of the crochet.
for ribbing, i count my rows of ribbing, and do that many stitches across. So if you did 80 rows, then you'd make sure you have 80 double crochets across (include your chain 3 at the beginning).
I just wanted to say I've noticed when double crocheting and turning your work my edges are straighter when I just chain 1 instead of 2. And also I crochet so much I love these videos!

Love that you just make it up and never seen ribbing done like that,have you ever followed a pattern? I'm making a Habitat cardigan by "Make do Crew" they do writen instructions and a video. Most crocheting will stretch unless using full cotton, if it was me I'd have frogged back so colour didn't run out half way threw a row. I've made most of my patterns connecting straight under the arm and alway s/c first, then you decrease as you go down. First time ever I'm doing a large cuff by using a hdcflo (Half double crochet front loop only).🥴🙂🙃 Jumper looks so cosy and warm, can't wait to see Benson's sweater. Xxx

Don’t stretch the ribbing. If you stretch it too far it won’t bounce back. It might be easier to do a row of single crochet to even up your stitches before you do the double crochet stitches. It takes practice. Your sweater is looking really long. For a small size it should be about 19 inches front & back , so about 38 inches wide. All of the measurements are on line if you need them. For a first sweater, its easier to do panels. A rectangle for front, back, and each sleeve.
If it is along a row you can cut it and it doesn't fall apart, I did that once when my amigurumi Head was to large and I couldn't unravel it😢 so scary... but it worked. Unless you cut vertically, I imagine then it'll fall apart.

Watching you make sweaters has inspired me to finally finish a sweater I started back in 2018. Now I'm halfway through the second sleeve!
instead of doing slip stitch ribbing you can do half double crochet ribbing which is a lot faster:)
also working in the round would be a lot easier
i always do ribbing in half double crochet, slip and single are too slow! can confirm it works fine, i use it for hat bands
