- Let me show ya how to make a Fermented Cocktail with some Japanese Wineberries I found in my yard! Don't worry if you can't find Japanese wineberries... any juicy berries will work. Give it a shot. If we can make it here, you can make it anywhere pal.

RECIPE:
🍹In the syrup
👉 Japanese wineberries - 2-3 cups
No wild wineberries in your backyard? Out of season? You can substitute from the grocery:
- raspberries
- blackberries
- blueberries
- strawberries
- any voluptuous juicy berry
👉 brown sugar - 2 heaping tablespoons, add a little warm water to help dissolve
👉 perilla - 2 leaves (can substitute with basil)
👉 mint - 1 crown
👉 bay leaves - tootreefor leaves
👉 jalapeño - 2 lil slices
👉 optional: hot honey - 1 teaspoon
Mash with a spoon and let it sit in a sealed container for 24-48 hours (extra points for using the zwilling fresh & save container)
🍹In the cocktail shaker:
👉 1 oz of your syrup - strained
👉 1.5 oz of gin
👉 pinch of perilla and/or mint
👉 little more brown sugar if you wanna
👉 ice
Shake in your shaker
Pour over more ice
Add a squeeze of lime if ya wanna
Pop a lime slice and a sprig of herb on top

4) If you ingest a Wild Leone, seek medical attention immediately.
From what I understand as a horticulturist , cultivation of the Leone species requires only a little bit of care. Preferring open space with at least 8 hours of sunlight, best culture occurs in a country environment. Regular fertilizing and feeding is required, preferably with fermented fertilisers. Some pruning may be required as they can grow quite tall. Water fairly frequently with non-typical alcoholic beverages. Not subject to many pests. Propagation appears to happen naturally with typical variation shown in the offspring. Not considered an invasive species.

Please note that Japanese wineberry, at least in Wisconsin, is prohibited by the DNR as it outcompetes the native flora including wild raspberries and blackberries. Not to say you can't grow it, but please be careful with it and don't sleep on the native berries either

Perilla is in the mint family. Most of the mint family have square stems. You can also use leaves in a tempura batter and fry. Need to add to my garden.

As a homebrewer, I've always found wild berries to be a very interesting wild card, if used properly. You can't just mash in wild berries you freshly plucked; best case scenario is that your fermentation stalls, worse case is that you die. Do not without all of the precaution.

Hey Brad! Awesome video! I love making syrups and ice creams with these berries too but please be careful telling people they can go cultivate their own wine berries one minute and then say they’re invasive in the next. Yes, they’re great for us as people because they’re tasty, but they’re destroying habitat for many different species of birds and reptiles all over our region.
Highly highly invasive - which is good news if you want to eat them, since they're easy to find and you can't feel bad about picking every single dang one. I think they taste like watermelon jolly ranchers!
