Nice video. That was an interesting way to make an omelet. I would have thought the earlier cooked egg would get over cooked, but I see he keeps lifting it and adding a new layer of egg underneath (in addition to flipping it). I assume like your other omelet video, they add a dashi to the eggs for flavor. I don't quite get the sandwich idea, but I guess if you can have a chicken sandwich then why not a chicken egg sandwich?! I look forward to trying someday.

tried to make this kind of omelet with a conventional coated frying pan rather than cast iron - these pans seem to be coated as well - glad to see the higher temperatures needed to cook an omelet this way won’t harm my pan 🤞 thnx for another really great food video 🙏😷🇨🇦
So much egg that is kinda too much. Good skills though, I think with only a pair of chopsticks that chef can do a lot. Not sure if I would eat that much egg but I recognize the chef’s skills.

京都は「手前から向こうに物理学に反して?巻く!」
やってみれば超難しいやり方をすると理解していましたが、
100年も続く老舗がそうではなくフライパンをあおる動作の
「向こうから手前に巻いている」ではないですか!に安心。
卵焼き器も関西は長方形で関東他は正方形と思っていましたが、
正方形に近い銅製ではないテフロン、これにも関西人の素人としては安心しました。
卵液を少しずつ入れて巻くのではなく、お玉に1杯・1杯と入れて
じっくり焼くのは火加減など経験が相当いりそうでチャレンジしてみます。
エビ天串はメニューのイラストで、2匹をつないでいるというのがわかりますが、
それにしても20cmもある1匹に見える長エビ天串は見事!
