Nice painting , before sketching or painting gesso coating important?
Not really..As we are using pre primed Canvas, a base coat of white will work most of the time. I only use gesso for any additional textures or smoothness.
How can I keep it wet like oil colour?
As acrylic colour dry fast
Acrylic dried fast and this is the beauty. Once you master to handle acrylic, you'll feel more confident with it. Try spraying water on your palette to keep it moist. It will help. Thank you.

How much water content is in pallet while painting on canvas or dry paint only
Maintaining adequate moisture is essential for painting and blending with acrylic. Try using your palette vertical. It will automatically maintain the moisture you need while painting. Thank you.

Realistic painting ke liye ek sahi reference hona jaruri hota hai. Agar reference hi sahi nahi hai, to waha se painting karna muskil hota hai. Aap digitally modify karwa sakte hai.

It is not possible to guide without seeing the reference. But there is no short cut for this. It may take time, but you need to paint this.
