What I LOVE is a great carnivore recipe (or better yet the ‘concept’?!) that is not trying to mimic a non-carnivore recipe. I was going to make a beef cheek stew, I’ll now add in the tails for the extra richness and try your idea of air frying them later, sounds intriguing! …and yes the bones will later go into a bone broth which has some ACV. Zero wastage, maximized nutritional benefits, fantastic!
I made 2 turkeys this Thanksgiving and I make gallons of turkey broth from the left overs. I used to call it soup but the vernacular today is broth. So soothing, relaxing and I just love it. Beef cheeks are super cheap and so very good. ❤
I'm going to try this soon! (In my crock pot). Last time I made broth I cooked it for 24hrs and I was still reacting to it. Thanks for reminding us about meat broth!!

Adding beef tendons from your local Asian market would be great if you can’t find beef cheeks or oxtails. I’m going to try this with beef ribs I have in the freezer.
Thanks, Anita. I had no idea that a reaction to bone broth was common. It bothered me to the point where I couldn’t stand the smell of it cooking on the stove. Beef broth is a good idea to replace it with the right type of meat. I actually boiled some lamb ribs (which I then air fry), and the broth is delicious. I don’t know if it will gel, but yummy nevertheless. ❤❤❤

Ahhh.. we grew up on meat broth! Osso buco (or beef shanks bones) that's what my mom would use. When I need a good broth, and I don't have marrow bones... I go for any beef bones I have in the freezer. My last batch was a beef short rib (a big one) and beef shank bones ... meat on... fat on... all really good!! I roast everything first.. gives a wonderful depth of flavor in my opinion.. and then... slow cooker. I'm afraid of the pressure cooker! (hee-hee!!) Thanks for sharing, Anita! Informative video! PS -- I bought that book in 2022... I need to read it!!! 🥰
I grew up fearful of pressure cookers, due to an accident my Dad had with their pressure cooker with the lid failing and denting the ceiling. Many years later, I was determined to try the new Instant Pots and I never looked back- I use it several times a week for various recipes. Definitely going to try to find beef cheeks and ox tail.
To speed up the cooling down, I pour the hot broth into my biggest pot and put the lid on. Then I put it in the sink and fill the sink half way up the pot. When the water is warm, drain it and replace with cold water again. Stirring the broth in a cold water bath cuts the cooling time to minutes instead of hours, and then not putting hot things in the fridge.
If you’ve never eaten beef cheek before, don’t be put off by it. Cooked slowly, they are delicious and flavorful. I’m blessed to have a market in the area that caters to the Mexican population, and it has the best selection of beef and variety of beef parts (“head to tail”) of any store I’ve found.

It didn’t get very gelatinous though…(tried to keep on stovetop on low at 180 degrees for 5.5 hrs ) but anyway it is delicious and I’m using it plus butter and salt as a morning drink to try and quit coffee (and all the party stuff I put in it 🤷♀️❤️). I got this idea from when you started lion diet. Thanks again!

Honestly, it's more about what you are NOT eating. Clean all the grains, sugars, processed foods, seed oils out of your pantry and eat single ingredient whole foods. Start with that and then you can tweak from there!
Meat broth can have lots of bones in it too, I take meat off and then keep cooking the bones n bits/skin for hrs. Use vinegar too to leach the bones Chicken wings n feet make best broth, very thick. Drumsticks are good too. I don’t buy chickens do I can’t backs n necks. I might buy thighs but we eat the meat off the bones so can’t use them. I can’t afford beef besides hamb and the rare chuck roast or ribs. Roasts n ribs don’t have bones anymore even 🤦♀️ So I have poultry broth 🤷🏼♀️

I have been making bone broth, but I have been thinking it doesn’t always do well by my gut. Is the common problem with bone broth loose stool usually? Daily Endurance Keto electrolytes has 380 mg sodium so it is lower in sodium as LMNT but the potassium and magnesia is the same amount and it has 30 mg calcium. I usually add the bottle medium mineral water, a scope of bulk electrolytes and salt in a carafe half a liter and 1 stick Daily endurance. To keep it from overflowing I add a splash of the bottled mineral water into the bottom of carafe the the Daily Endurance Keto electrolytes and the salt and the bulk unflavored electrolytes the fill it slowly to the mark. When I use my 2 liter bottle I up my electrolyte ingredients and the salt.

There's nothing out there quite the same as beef cheeks but to make the meat broth ANY meat will work. I do it with ribs, brisket, any types of meat that need tenderizing with a pressure cooker is perfect!
I'm wondering if searing the meat beforehand would add some flavour. I've not used these cuts before, so maybe it wouldn't make a difference, but I usually sear for the mallard effect.

Yes, it's much gentler on our tummies than bone broth!
Have you tried adding 1 to 2 Tablespoons of vinegar to your broth? It helped me enjoy broth again.

Just saw beef cheeks, beef lips , chicken feet and oxtails at Mexican grocery store here in Chicago .Now I know what to do with them.

What do you freeze your broth in a container or baggies?
I think cow feet make the most potent meat broth of all meats.
