      @@loona8398 When I made this recipe I made lemon blueberry madeleines and what I did was zest 1 lemon and add 18g lemon juice. If you want more lemon flavour I would suggest to fill it with either lemon curd or to top it with a lemon glaze. For red velvet, I think that replacing the heavy cream with either half buttermilk or even ⅔ buttermilk as well as adding cocoa powder (like the chocolate madeleine recipe in this video) could give a red velvet flavour. If you were to do all red velvet madeleines you would of course have to make a conversion and use 20g cocoa powder rather than 5g unless you make a small batch. Afterwards you could even do a cream cheese filling or even a glaze and I'm sure that will give a beautiful red velvet flavour. Best of luck to you, I highly recommend this madeleine recipe if you ever get round to making it !! 😄💗

      포장박스는 한 3년전에 한국에서 구입했어요. 어디서 샀는지는 확실히 기억은 안나는데 저는 한국 갈 때마다 보통 아트박스나 교보문고 가서 선물 박스나 포장지 왕창 사오거든요. 그 때 구입한 것 같아요. 그리고 왁스 페이퍼는 아주 오래전 일본에서 구입했어요! 샵 이름이 cuoca 였던 것 같아요. 헤헤 감사합니다 현이님 ☺️

      Yes but It differs the texture but its fine if you put milk instead. Heavy cream makes it more moist

      원래는 템퍼링을 해야하는 게 정석인데 귀찮아서 그냥 녹이고 사용했어요. 😅 특히 인스퍼레이션은 다른 초콜릿에 비해 잘 굳는 느낌이더라구요. 초콜릿 식감이나 템퍼링의 그 반짝임 같은 거에 민감하시지 않으시면 그냥 녹여서 사용하시고 바로 냉장보관하면 잘 굳을거에요. 녹이실 때 너무 뜨겁게 녹지마고 살짝 덩어리가 있을 때까지만 녹인다음 저으시면서 남은 열로 완전히 녹이시면 좋아요. 저는 템퍼링을 자주 해본 경험으로 이렇게 그냥 녹일 때도 템퍼링 하듯이 녹이거든요. 답변이 도움되었을까요 ㅠㅠㅠㅠ
