This is “true country food”, I grew up on fried pig feet, pig feet cooked in white beans, pig ear sandwiches, smoked pig tails, pig tails in cabbage. My Dads theory was simple, “It’s what we have for dinner, eat or don’t eat at all”. These with a pot of greens, some Pot Liquor in a cup with pinto beans and cornbread, that’s a meal. Dad always said, “If you go home hungry, its your own fault.”

Chef, I never heard of fried pig feet. My uncle used to like his chitterlings fried after they got done.We ate the braid with scrambled eggs and any part of the pig we could get.They were hard times for a lot of us.I always say my parents did the best they could.And I thank them for it.Some of us have forgotten how hard it was.
