Try a quesadilla with longhorn cheese and sliced tomato. Put black pepper on the tomatoes. My cousin showed me this when we were kids and I still make one every once in awhile.

The Mexican restaurant I used to work at we called our tortillas with beans, lettuce, cheese, hot sauce, rolled up and topped with guacamole, sour cream, chopped jalapeno, and more hot sauce on a plate with rice and more beans.a Texas Taco Plate! It was our biggest seller.😊
Native Texan here that moved up north many years ago...This man, what a delight to watch him cook! Food was a big part of my favorite childhood memories in Texas. I had Mexican American neighbors, Pete and Mary, and they would make me delicious treats I will never forget. Mary would make homemade tortillas and fill them with honey, her homemade tamales...and she made these big quesadilla sandwiches with ham too!! When Arnie made the ham and cheese one, my heart sang. Quesadillas ... one of my very favorite things to eat! So simple and yet, so very tasty! You can literally have it any way you want from BBQ pork to just plain cheese. I like to make pizza quesadillas. Not sure if anyone remembers Zapata/Zantigo restaurants in the midwest, but they had something called a Chilito. A wonderful chili sauce topped with monterey jack and cheddar cheeses. It was so good! I knew, well, still know the proprietor and he told me what they used so now I make them at home. Oh YUM! And for those who didn't know, Zantigo's is back, baby!

Growing up my dad would throw together the first quesadilla you made when he got the munchies for him and us kids. There was always tortillas and cheese in the fridge. I do the same thing for a quick lunch or snack. My mom every so often would slow roast a chuck roast with lots of garlic and seasoning and we would use the meat for tacos, burritos, tostadas or quesadillas.
For that first style looks just like a grilled cheese but fried in butter using white bread & American cheese and pressed flat & toasted until a crispy golden brown. Served with tomato soup on cold days.
I make little quesadillas to dip in sopa de fideo on those cold winter days when you want some hot and comforting. It certainly is the Mexican equivalent of a grilled cheese with tomato soup 😊
I like your videos Arnie! I’m from Harlingen but I’ve been in Pennsylvania since 1989. I moved back to Texas in 2021 but over here in San Antonio. I can always tell when someone is from the valley from their accent lol these look so delicious! Thanks for sharing

I live in East Las Vegas. You ca actually get those giant tortillas at the Mexican store down the street. Next holiday, I'm going to make one of those giant thingamajigs...
Man....love all these! That chese one is a go to late night snack! And that last one is built like the huge burritos they sell at restaraunts by me. Grab a bowl of salsa and just drench, bite and repeat! Lol

Looks good! I make mine more like the chicken one you made, except I mix cheddar and pepper jack. And I butter the tortillas instead of using oil. It’s hard to go wrong with any version of a grilled cheese sandwich, but this is one of the best.

One thing that tends to be a good combo is some of the basic ground beef taco meat and pico on a flour tortilla with whatever cheese mix you prefer. It's one of the simpler quesadillas to get stuff for with little effort and most just view it as a copy of Taco Bell's old meximelt...

you need a 36" BlackSone Griddle, for more space !! I make some delish quesadillas exactly like what you just made!! i too make the simple corn tortilla with yellow cheese( i use sandwhich cheese) for a quick scooby snack!!! lol

Yeah, Cheddar cheese isn't known for it's "Cheese Pull" Rating, I do know that EVERY Cheese Enchilada I've ever eaten has always been made with Yellow Cheddar. I love Oaxaca in Chili Rellenos.
Arnie! I recently went to Tucson and there they have carmelos which were described to me as a grilled tortilla with cheese and meat. When I asked how it was different than a quesadilla they said a quesadilla is by definition only tortilla and cheese and when you add meat it becomes something else. I didn’t buy that story but I’d like to hear your thoughts!
Different regions have different names for the same dishes, 'aint no right way aint no wrong" people argue over names for dishes and thats nonsense to me, it all depends where your from.
Look around. Tortillas are not hard to make. My only problem is that they end up square instead of round. But an old guy (well, probably younger than me) I talked to laughed and said that was OK, his aunt's tortillas were square and nobody cared.
@@WastrelWay Yeah, what you need to do is roll the dough into a ball, dust your counter with some flour and roll away from you 1 time, then turn the dough 90 degrees and roll again, pick up the dough dust some more flour turn the dough 90 again and roll, by the forth time of turning and rolling you should be fairly close to being "round" I have a Rolling Pin that has thickness discs on the end and I'll use 1/8" so all the tortillas are the same thickness too. But, I could see how Square or Rectangular Tortillas could be a HUGE advantage for some items, it's a Foodie trend to call things "Rustic" and you're free to call your Tortillas "Rustic" too.😁
