Best thing about quesadillas is that you can throw in leftovers and it’ll be good! I always have cheese and tortillas in my house to make a quick quesadilla if I’m too tired to cook.
The Mexican restaurant I used to work at we called our tortillas with beans, lettuce, cheese, hot sauce, rolled up and topped with guacamole, sour cream, chopped jalapeno, and more hot sauce on a plate with rice and more beans.a Texas Taco Plate! It was our biggest seller.😊
Arnie Arnie Arnie. Muchas gracias for your channel. I’m trying to cook food that I thought was beyond my meager skills but you’ve changed my mind. Ain’t no right way ain’t no wrong way freed me up. Thanks again señor! ¡Vámonos!
Try a quesadilla with longhorn cheese and sliced tomato. Put black pepper on the tomatoes. My cousin showed me this when we were kids and I still make one every once in awhile.
That is a true statement, there is no right or wrong way. As long as it taste good. You love what you're doing and it shows. You're so down home. Where have you been? You have a great sense of humor, which is so refreshing.
Quesadillas ... one of my very favorite things to eat! So simple and yet, so very tasty! You can literally have it any way you want from BBQ pork to just plain cheese. I like to make pizza quesadillas. Not sure if anyone remembers Zapata/Zantigo restaurants in the midwest, but they had something called a Chilito. A wonderful chili sauce topped with monterey jack and cheddar cheeses. It was so good! I knew, well, still know the proprietor and he told me what they used so now I make them at home. Oh YUM! And for those who didn't know, Zantigo's is back, baby!
Native Texan here that moved up north many years ago...This man, what a delight to watch him cook! Food was a big part of my favorite childhood memories in Texas. I had Mexican American neighbors, Pete and Mary, and they would make me delicious treats I will never forget. Mary would make homemade tortillas and fill them with honey, her homemade tamales...and she made these big quesadilla sandwiches with ham too!! When Arnie made the ham and cheese one, my heart sang. Makes me think of my amazingly sweet and generous Texas neighbors. Thank you for a trip down Texas memory lane ❤ these look incredible
Arnie and Mama, you are both a breath of fresh air in a world filled with doom and gloom!❤❤. I love your recipes and make my beans following your directions! All your recipes are my go too! I love the quesadillas, and my favorites are the salsas and hot sauces! Thanks again Arnie for your bubbly personality. Even my husband agrees, you can't stay in a bad mood if you're watching Arnie!😊❤
Growing up my dad would throw together the first quesadilla you made when he got the munchies for him and us kids. There was always tortillas and cheese in the fridge. I do the same thing for a quick lunch or snack. My mom every so often would slow roast a chuck roast with lots of garlic and seasoning and we would use the meat for tacos, burritos, tostadas or quesadillas.
I’m so happy I found your channel! Born and raised in Texas and can relate to your cooking. But I’m learning more watching your channel. Thanks Arnie 🙏
Beautiful cooking!!! Quedarán riquísimas. A little Chinese secret for you that’s done in every Asian restaurant so your chicken will never be dry. Simply coat it with corn starch then stir fry or do it in your flat grille. I also tried shrimp quesadilla with 5% black caviar. I ONLY make quesadilla sincronizada! Nunca dobladas.
Man....love all these! That chese one is a go to late night snack! And that last one is built like the huge burritos they sell at restaraunts by me. Grab a bowl of salsa and just drench, bite and repeat! Lol
His accent is always drifting somewhere between TexMex, Yeehaw, Yeeyee and Mexican Grandpa All with a constant tone of a humble Father Dear God; He’s perfect
So glade I came across one of your videos. My hubby and I enjoy mexican food. I have not been able to make mexican rice taste right....Until I maid your mothers WOW! thank you so much we will always make it her way. God bless. Don and Carol
I’ve made that rice like 4 times inside of a month! First time I made it I told my family “y’all better get used to this” haha. They liked it too, so it worked out.
For that first style looks just like a grilled cheese but fried in butter using white bread & American cheese and pressed flat & toasted until a crispy golden brown. Served with tomato soup on cold days.
I make little quesadillas to dip in sopa de fideo on those cold winter days when you want some hot and comforting. It certainly is the Mexican equivalent of a grilled cheese with tomato soup 😊
I like your videos Arnie! I’m from Harlingen but I’ve been in Pennsylvania since 1989. I moved back to Texas in 2021 but over here in San Antonio. I can always tell when someone is from the valley from their accent lol these look so delicious! Thanks for sharing
Looks good! I make mine more like the chicken one you made, except I mix cheddar and pepper jack. And I butter the tortillas instead of using oil. It’s hard to go wrong with any version of a grilled cheese sandwich, but this is one of the best.
I live in East Las Vegas. You ca actually get those giant tortillas at the Mexican store down the street. Next holiday, I'm going to make one of those giant thingamajigs...
Arnie all those quesadillas look good! Quesadillas are my favorite quick meal to make. Sincronizadas take me back to when we would go to Jalisco where my dad was born with a chocomil in a plastic bag with a straw. Good ole days. That’s a good combo! Saludos desde San Antonio.
@ArnieTex love the videos, watching has made me a better cook in the kitchen and especially on the grill…since my mom is origanally from the valley(mcallen) and the rest of the family in pharr and san juan she also loves watching the videos and is loving how ive gotten really good at making different mexican and texas style BBQ dishes…mom wants to go home for vacation in the near future, would be an honor to shake your hand and also say hello to the great momma tex as well 😉
Thank you for your recipes I'm getting my Barria sauce/Au jus perfected the only thing is getting the meat to render without too much greese in the sauce
I am really happy to find your channel! Texan transplanted to Kansas so I am having to learn to cook the food I love because it ain’t the same here!! Muchas gracias!!
You know the older I get the midnight snack hour moves up as well lol😂. The other night I got up for a bite of fajitas at 8:45pm my wife says I'm out of control 😮
Arnie, I’m from Oklahoma and chiles are a big deal at home. Can you do a master class especially with mama Tex ? Guajillo, ancho, de arbol……. Teach us plz
One thing that tends to be a good combo is some of the basic ground beef taco meat and pico on a flour tortilla with whatever cheese mix you prefer. It's one of the simpler quesadillas to get stuff for with little effort and most just view it as a copy of Taco Bell's old meximelt...
you need a 36" BlackSone Griddle, for more space !! I make some delish quesadillas exactly like what you just made!! i too make the simple corn tortilla with yellow cheese( i use sandwhich cheese) for a quick scooby snack!!! lol

I love his voice. I could hear him talk all day
I want to enjoy everything in life as much as he loves cooking and eating!

Right on thank you Eli glad it was a hit brother

That last one.. a Quesadilla is just a flattened Burrito. My mind is blown! Never thought that could be done!
Quesadillas ... one of my very favorite things to eat! So simple and yet, so very tasty!
