I’m a 100% disabled combat wounded vet from Michigan. In between doctors appointments at the VA, I love watching your videos and experiment cooking your recipes. I’ve been medically retired for 11 yrs. I was wounded in Afghanistan in 2012. The doctors all ways tell me you need a hobby To stay busy. And for the last 3 years I found cooking is a great release. Thanks Arnie Tex
Arnie, that’s gotta be an old menu, there is no way a Tampiqueña is $7.99! Now in days, the cheapest Tampiqueña is like $14.99, but easily it’s a $20 plate
Yall make me feel like I’m back home…I love it…born and raised in Harlingen. Currently stationed in Aviano, Italy with the Air Force. Love y’all ❤️ keep doing what you’re doing!
"Queso Fresco", has always been a mystery to me. I see it all the time in the market. Thought of putting it on my homemade pizza like mozzarella. I asked a woman who was buying some at the store. She said, "It probably won't work". Mamma Tex, Concurs. It DOES NOT MELT!
Always a good day to hang out with the ArnieTex Family. Hope everyone watching have a good weekend and be sure to try some recipes here during the week!
Beautiful family Arnie, God has blessed you immensely. Not only that, but you represent America perfectly. A proud American, but haven't forgotten your culture and blend the two very well. This is true assimilation. God bless you and your family man.
Celebrating Cinco tonight with Your/mom’s salsa recipes, chorizo/cheese dip, rice recipe, chicharrones salsa roja, fajita carne etc. you bring the south Texas flavors to our table. Gracias.
Love your stuff and love trying to make mex food. Miss it after living houston for 35 years and now in east tenn. So whats the difference between carne asada and fajitas? Thanks again for great vids!!
That looks great Arnie, your mom and wife recipe is excellent. Here in Tucson, you would be lucky to find a fajita as yours, our selection for good meats is very limited and if you are lucky to find it, the prices are outages. Wish I lived in Texas.
Good morning! You guys are all so awesome, especially your mama! The plate looks delicious and I want to make all that food BUT you forgot to add the recipe for the enchilada sauce! I’m waiting……! Thanks for sharing all your cooking secrets.
Looks tasty and easy enough. I made your mom's rice months ago after I saw the video. It's so easy and it came out perfect just like hers did. You can't beat a good steak and cheese enchiladas!
Hello ArnieTEX, The General (TX-AZ) here letting you know today (Mother's Day) I'm going to grill some Carne Asada w/ your help. Thx for all your videos. BOOM!!!!!
WoW!! Look at those prices on that menu. These days, all those items are basically double of what those prices are. Anyways, everything looks delicious!!
Add 2 T. of finely chopped celery along with the rice to take it to the next level. This is one of those things that will make you smack your forehead and say, “Ayy-yai-yai! Why didn’t I do this before???”
Mann...Tampiquena's that I enjoy the most came with the soft beef taco, tostada, enchilada, rice, fajita , avocado ect...this dish is basically endless in combinations. I can't believe how the prices for this plate has gone through the roof after covid. $8.99 before $18.99 today for just the basic plate!!
lol my ex-girlfriend used to give me hell when we ate Mexican cause i always ordered the same thing but hey if they can’t get th enchiladas right, i’m not going back there 😂
Love your content! Went to the RGV for the first time in 2022 and it's now one of my favorite regions in Texas! Just curious, is your family original Tejano ancestry or immigrants from another state in Mexico?
I love this dish. They serve it at a Mariscos by my house. Never seen it anywhere else. When i asked a hard core mexicano about it they looked at me like i was stupid
Sigo su canal amigo pero pero este canal deve ser bilingüe esta muy bueno el canal de cocina pero no todos hablamos ingles yo soy de el Huisache Nuevo León
I go very hot oil. Use the tongs to to judge when the tortilla has only just begun to get too firm. Remove the tortilla and allow the excess oil to drip back into the pan. Then soak it in the sauce until it becomes completely soft and pliable again. The sauce reverses the crisp and firmness, if it's not too severe. This creates a nice, rollable tortilla that never rips.
Arnie, you grew up in Pecosnot from Van Horn so,I,love your cooking cause it reminds me of my MAMA’S COOKING.i no longer live in V.H BUT STIll in far West Tx. Like El Paso. Keep,up,the good videos.love your grilling videos.
Now this is cooking. This is what I want for my last meal . I prefer flour tortillas most of the time so I can eat with my hands ol skool. Thanks to Arnie and Wifee and Momma for sharing my favorite food in the world. ❤️

Tampiquena from Monterrey in Spartanburg SC hits the spot everytime. Large pitcher of XX Amber with a few tacos on the side....get me some all day.
Dos Equis Ambar or Modelo Negro makes any Mexican meal complete 💯

What oil do you use in your kitchen and what do most Mexican restaurants use for oil to cook with? I love watching your videos.
Most used oils are Veggie and canola but use what you like, they all work for most cooking. i use mostly EVOO

My new favorite cooking show! Please be my father in law, sir!
I like the way you do your beans..most restaurants here in Oregon make them too runny
Celebrating Cinco tonight with Your/mom’s salsa recipes, chorizo/cheese dip, rice recipe, chicharrones salsa roja, fajita carne etc. you bring the south Texas flavors to our table. Gracias.
Thank you for teaching us.
Love your stuff and love trying to make mex food. Miss it after living houston for 35 years and now in east tenn.
So whats the difference between carne asada and fajitas?
Thanks again for great vids!!
Asada means "grilled" , "fajita" is slang for skirt steaks. Now get your popcorn out, here it comes lol.
Happy cinco de mayo Arnie!
You are an inspiration to young aspiring home chefs the world over ❤️
Best wishes, always....... from Houston. ⭐
That looks great Arnie, your mom and wife recipe is excellent. Here in Tucson, you would be lucky to find a fajita as yours, our selection for good meats is very limited and if you are lucky to find it, the prices are outages. Wish I lived in Texas.
I make rice same way, I utilize chicken broth instead of water especially chlorinated city water! The flavor of rice a lot richer tasting.
Please share with me the brand and information for your gas two burner cooktop. We really want one so we can cook with our cast iron.

“Who’s making them?” “You are” “that’s why” 😂😂😂 I was dying laughing so something my family would say too thanks for sharing these moments with us!
This is my go to meal at most restaurants as well! One place I frequent uses ribeye instead of skirt and it’s KILLER!!
Man, that looks good Arnie. I wish I could find something like that around near.

The best tampiquienas come with fries. The worst part is the dry salad. Im gonna make one now--with fries.
