Hi Today I tried both uppu and Vella cheedai using your recipe. Both came out very well.Ofcourse in uppu cheedai I did not add kadalai paruppu. Nenga solrathu correct, but Jaggery to Jaggery sweet marum, less sweet Jaggery ah iruntha 1 tumbler Jaggery sariya irukum. But na use panathu nalla sweetah irukara Jaggery, so kamiya tha use paninaen. Actual ratio 2:1 than. Suppose na full Jaggery use pana sona people confuse panipanga. Athai video la clear ah mention pani irukan Jaggery melt pana water pathute sethukonga nu. Thanks and hope this clarifies. Let me know if you have any more questions.
It is not about the quantity of water. It is completely based on the sweetness of the jaggery. If the jaggery is more, then seedai will not come in proper shape and it will break when you add them to fry in oil. Thanks.

Can you use the same oil for uppuseedai as the one used for vellaseedai?
Ya sir you can use the same oil for both...but first you should fry Vella seedai and later you should fry Uppu seedai.
