This is a very small study with about 20 participants, for one specific meal. What you say sounds plausible, but you can't reliably draw these conclusion from this study. Because the study was conducted with one specific meal (broccoli and tomatoes with sesame oil, fried fish, white rice), even if we ignore other limiting factors of this study, your conclusion on all other foods might be wrong. For example, it's possible that you wouldn't get the same result with another carb, or if the vegetables weren't consumed with oil.
